Creamy Red Pepper Salmon Pasta

This was delicious!!!! But I added 1/3 cup heavy cream as some reviewers suggested - first I brought the other ingredients to a boil, then I added the cream and simmered for about 5 minutes. I didn't mix in the fish juices either because I was worried about the lemon curdling the cream. I also added a pinch of salt and a dash of cayenne pepper.

Pumpkin Chocolate Chip Cookies III

These cookies are delicious!! Definitely more cake-like as some reviewers said, but still really good. Also, I got about 40 cookies from this recipe, not 2 dozen (used a teaspoon to scoop dough onto cookie sheet). I made some changes based on what other people had written: 1) Cooked at 360 degrees Farenheit in a convection oven for 11 minutes, instead of 350 degrees for 10 minutes; 2) I added 1/4 tsp nutmeg; 3) I added lots of red and a little yellow food coloring to keep the orange color; 4) I flattened out the dough a bit when I put it on the tray so that they bake a little flatter instead of a heaping mound; 5) I smacked the tray down a few times and shook it a bit to try and get the dough to settle down before sticking in the oven; 6) I only used 15oz of pumpkin instead of 16oz because the grocery store only sold 15oz cans.

Strawberries with Balsamic Vinegar

SO DELICIOUS and SO EASY! I like this much better than plain strawberries on ice cream. I added this strawberry mixture to a bowl with pound cake chunks, ice cream, and whipped cream - AMAZING. I didn't use the pepper because I don't really like much of a pepper flavor. This is perfect for using with slightly busted strawberries - the ones that don't look pretty and presentable. When you chop them up and put them in the dark vinegar, they all come out looking deep red and pretty. I will definitely make this in the future for summer BBQ party dessert!

Baked Salmon Fillets Dijon

DELICIOUS AND AMAZING!! My husband said that this was the best thing I've ever made for dinner. I followed the advice below and mixed the breadcrumbs and the butter BEFORE putting on the salmon (it sort of made a breadcrumb paste). I didn't have italian breadcrumbs, so just added italian seasoning to the breadcrumb mixture. I also asked for the salmon skin to be removed at the grocery store so it was easier to eat at home. Served this with a lemon wedge, parmesan and arugula salad, and roasted potatoes.

Bolognese Stuffed Bell Peppers

Fantastic! My husband LOVED these. To make it a bit healthier, I used brown rice instead of white rice, and used 1/2 cup of carrots and 1/2 cup of celery. He also likes spicy foods, so I used a premade spicy marinara sauce. I finely chopped the pancetta, because I don't like big chunks of pancetta, but do like the flavour. I blanched the peppers first (cooked about 2.5 min), and also added 1/4 cup breadcrumbs to the top before putting in the oven. Tip: Make extra filling and eat it on its own the next day - will freeze and reheat very easily, and it is delicious even without the peppers!

Happy Shrimp

Delicious and very easy! I thought this was better than most creamy tomato pasta dishes you would find in a restaurant. I made the following changes: 1) used 1/2 cup regular onions instead of 1/4 cup green onions, 2) added red pepper flakes, 3) substituted olive oil for half the butter, used 1/3 cup white wine, 4) topped with fresh grated parmesan cheese, 5) Before serving, tossed with whole wheat spaghetti. This would probably also be good with some green vegetables mixed in, maybe peas, asparagus, or broccoli? We will definitely eat this again.
