Nina's Cucumber Salad

Polish Noodles (Cottage Cheese and Noodles)

Made this for lunch today and I must say, I like this so much better than mac and cheese! I just loved, loved, loved the flavor from the onion. It was one of the easiest recipes to make and made more than enough (I have leftovers so I have lunches for a couples of days.)

Special Italian Easter Pizza

Oh my gosh, this was absolutely INCREDIBLE! I know it's not the healthiest recipe, but sometimes you need to splurge, and this was worth the calorie splurge. I was worried about the top crust over-browning, so I baked it topped with foil until the last 20 minutes, when I removed the foil and then did the egg wash. Perfection! It was a beautiful golden brown and the egg wash gave it a nice shine.

Lime and Tequila Infused Strawberries

This is my new favorite summer dessert! Definitely use good tequila like another reviewer suggested and stir often to create a yummy juice/glaze over all the strawberries. I'm going to make these again for the 4th of July for the red layer in a red, white, and blue trifle (layers of cut up pound cake, whipped cream, blueberries, and these strawberries.)

Peanut Butter Potato Candy

I couldn't believe how easy this candy was! Make sure to add enough powdered sugar to get the potato portion to a dough that is easy to roll, and not too sticky- I think I added a little more than 16oz. And use more than 1/3 a cup of peanut butter. I probably spread on a full cup (I LOVE peanut butter and wanted a thick layer but I would say 2/3 a cup would be the perfect amount). I actually rolled the outside with dark chocolate shavings before I sliced it and it turned out really good and made it look nice.

Klupskies (Polish Burgers)

These were amazing leftover! Normally I don't like burgers leftover- they dry out and lose their flavor. But these kept their mositure and the flavor was great when I reheated one 2 days after I had initially made them. I made these small and served them on sweet Hawaiian rolls and topped them with cheese, tomato, and additional onion (since I love onion).
