Black Beans and Rice

This cannot be a diabetic recipe if it uses white rice which is known to strongly elevate blood sugar do to the body's response to turn the rice directly into sugar. If you really want to try this, use brown rice instead. If you don't believe me, check your blood glucose level after eating white rice.

Apricots and Dumplins

This was a really good recipe and very versatile. Use any fruit you would use in a pie or cobbler. We used peaches. And the one thing about recipes is you can adjust things to your taste. It doesn't mean it is a bad recipe. In other words if you like your sweets less sweet than most, then just cut down the sugar. Don't berate the recipe for being sweet if it is a dessert. Just adjust to your tastes. This is a keeper.

Wow! I know what I am doing next time...using chopped piece of Heath or Score bar instead of the chocolate chips. Or maybe some of both. What a great idea!

Hasselback Potatoes

Does anyone besides me have issues with rating a recipe lower JUST because you altered it to your taste? Come on, people. This is a great recipe! If I decide to use olive oil instead of butter, add herbs and use low fat cheddar, it's still a great recipe, just my version of it. Thanks for this awesome recipe. I'm sure I will come up with other versions, because this is a keeper. Grilled mushrooms might be nice. :)

Soup-erb Chicken Casserole

This was a week day keeper for my family. It's easily altered to suit your tastes or what you have on hand. I didn't have cream of broccoli soup so I used cream of mushroom. Most any cream soup would work. I also didn't have any mozzarella so I decreased the milk to about 2/3 a cup and added in some Velveeta (about 1/4 or less of a large carton). I used peas and added some chopped onions for the veggie mixture. Then mixed the butter and stuffing mixture with my clean hands to totally incorporate the butter. We really like stuffing so I used at least twice as much stuffing and butter. My family really enjoyed this. Thanks for the recipe.

Cake Mix Cookies IV

I got a similar recipe from my nephew. His recommendation was Devil's food cake mix and add in some chocolate chips. The cookies almost taste like Brownies and they are soooo goood! Great for bake sales because they are so fast and easy. I'm trying a carrot cake with white chocolate chips in a minute. Should be great. I like the butter pecan cake idea. Sounds yummy!

Day Before Mashed Potatoes

Granny's Cherokee Casserole

My husband is picky and he said this was a keeper! It does freeze well and if you need smaller portions just place casserole in two smaller baking dishes and freeze one. I used fresh garlic and subbed original Mrs. Dash for seasonings. Also subbed cheddar for american. Had no instant rice so added 2 cups of cooked rice but drained the tomatoes before adding. My daughter and I thought it was even tasty without the cheese. I like the stove top method idea. :)
