Italian Style Turkey Meatloaf

I made a few changes based on another review - I added about 1/3 c of shredded zucchini for additional nutrition. I was concerned the amount of bread crumbs would not be enough, but the meatloaf was perfectly moist. I did not add garlic because my Italian seasoning already had garlic in it, and I was making it for the kids and myself tonight. My very picky 8 yr old daughter loved it. My 5 yr old son who usually eats just about anything, surprisingly did not like it. I did not use tomato sauce, instead I did the traditional ketchup-mustard-br sugar glaze which my kids like. I gave it 4 stars because of the mixed reviews around the table. I will make again, and hopefully my son will eat it next time!

Slow Cooker Beef Stew IV

I thought it was ok, a lot of prep for a slow cooker recipe. I took the day off, otherwise there would not have been time to prep it, which took closer to 25 mins. I did not have any onions - perhaps that would have mad the difference? My kids would have not liked the onions anyway. My son, 5, who is the least picky in my family loved it. My daughter, 8, was all "Meh". My husband is the most fussy and he swallowed a few bites, saying it was not his thing. I enjoyed it well enough, but will need to wait a good long time before trying it again.

Chicken Enchiladas II

My very picky 7 year old said "Best dinner EVER". Cleaned her plate, which never happens. She helped me make them - measuring and stirring, and rolling, then pouring. I think having a hand in making them made a difference too. My even pickier husband said it was tasty, and to add it to my rep of weeknight dinners. Easy, tasty, great way to use leftover chicken. I did make three changes - I did not have green onions so I used a small amount of chopped yellow onion just to add flavor. I also did not use green chiles. Instead I put in about 1/3 cup of prepared mild salsa. I used cream of celery soup because that's what I had. Also, my family would not have liked the mushroom bits. Will make again.

Flavorful Flounder For the Oven

Easy, quick, and tasty. Patted fish dry, added a pinch of onion powder (I had no onions), a pinch of garlic powder, and a sprinkle of parsley for color. Garlic was a little too much - my mistake - but otherwise very good. I baked in a 400 degree oven for about 5 mins then put under broiler until fish was flaky. Will definitely make again.

Rich Italian Sausage and Potato Soup

Very easy, tasty. My 3 yr old son gobbled it up, my very picky italian husband thought it was great but my even pickier 6 yr old daughter wouldn't touch it. We added a little salt and pepper, and of course some Parmesan cheese, like all good Italians do to their soups!

Old Fashioned Mac and Cheese

Meh. First of all a 9x13 pan seemed way too big. After greasing that pan and dumping 1/2 the Mac into it, I dumped it into an 8x8 pan. I didn't know how to measure the 1/2 lbs of the cheese so I guessed. Turned out pretty good, but the instructions didn't help. For nutrition I added about 1/3 cup of puréed sweet potatoes, as I often do to boxed Mac n cheese. Kids have no idea it's there.

Baked Haddock

I've made this several times now and every time it works out great. Baking the fish on a rack works very well, as others have done. My kids, 2 1/2 & 6 loved this - I had to call it Extra Special Crunchy Love Fish - and they gobbled it up. My very picky husband enjoyed it too. making it tomorrow night again!
