No Bake Cookies I

Delicious! Though even my husband who has the sweetest tooth of anyone I know says they'll put you in a diabetic coma. I think cutting the sugar back by 1/3 would take nothing away from them.

Greek Penne and Chicken

With minor modifications, this was the best quick meal I've made. Substituted: Pasta- used whole wheat penne. Onion- yellow instead of red (I think the taste would have been too peppery). Tomato- 5 or 6 sliced cherry tomatos. Low-fat feta- made sauce creamer and meal healthier. Added- 1/2 cup frozen spinach, thawed Added-marinade from jar of marinated artichoke hearts.

Sweet Potato Casserole IV

I made this for Thanksgiving Dinner last year and it was a BIG hit. Made exactly as written, no changes and it was delicious. It was sweet enough to serve as a desert, to be honest, but at Thanksgiving, who cares? I'll be making this again this year, for sure.

German Chocolate Cake III

This is pretty much the exact same recipe on the box of German chocolate I bought. There should be a disclaimer somewhere. That being said, it's a great recipe. VERY time consuming- something I'll save to make on special occasions.

Fast Rice Pudding

I read the reviews and thought I'd try this. Maybe I'm just picky, but this tasted nothing like rice pudding to me. After being in a covered container in the fridge overnight, the rice absorbed all the liquid so I was left with a bowl of sticky, sweet rice the next day. Which I guess is okay, but it's not rice pudding. Next time, I'll try the old fashioned way, I don't think there is a shortcut to good rice pudding.

Sean's Falafel and Cucumber Sauce

Great recipe as is, didn't change a thing. I've never had falafels before and this was my first time making them. They were really, REALLY good. Even my husband, who says he hates chickpeas, thought it was quite tasty. The cucumber sauce is fantastic!

Naan

Good without the garlic too. The trick is making it as thin as possible. You also have to turn it a few times. After you put it on the skillet, you wait until the first bubble starts on the bottom. Wait a minute for it to get as big as it's going to get and flip it! I use tongs, not a spatula as that can deflate the bubble. Same with the other side...wait for the bubble to form and flip it again. You definitely need to watch them as you make it. The initial time to make the dough takes a while. Is it time consuming? Yes. Worth it? Totally. It makes so much, I just refrigerate the dough and make 5 or 6 every day at breakfast and we eat it throughout the day.

Strawberry Cheesecake

This was my first attempt at a cheesecake. I used the base recipe and omitted the strawberries just because I wanted to keep it simple for my first try. I can't believe how rich and thick this was, it was delicious! I'm going to try it with the strawberry sauce next time.

Artichoke Spinach Lasagna

Excellent recipe! I didn't have any vegetable stock so I used the water from the can of artichoke hearts instead. My husband doesn't even like artichokes and he had 2 servings! Definitely a keeper.

Salmon Cakes III

I used bread crumbs with this recipe instead of a slice of bread. I think it would be a little bland otherwise. My ex's grandmother used to make these for us all the time, it's a comfort food for me. I eat them with applesauce. She picked out the bones and used a food processor to mix all the ingredients. It seems to work since every time I make them without a food processor, they don't hold shape at all. This time was no exception. I love them anyway but my boyfriend was turned off to them because you can't eat them without it falling off your fork.

Mexican Shepherd's Pie

This recipe is a new favorite in my home. We omit the olives (neither of us like olives) but it's otherwise perfect as is. It's a nice twist on a classic meal. Love it!

Slow Cooker Beef Stew I

My first beef stew and it came out great! I took most of Corinne's advice; I browned the beef first, and added Beef Stew seasoning packet. It was slightly more labor intensive than I thought a slow cooker meal should be but the result was some incredibly tasty stew. I will probably try not browning the beef next time. If it comes out just as good, I will change my rating to 5 stars!

Sophie's Zucchini Bread

I didn't have two loaf pans so I made muffins. I took another reviewer's advice and used 1/2 cup brown 1/2 cup white sugar. I added nutmeg as well. Even with these additions the muffins were just "eh". They're really quite tasty with butter on them but otherwise there just isn't a whole lot of taste. The time it takes to grate the zucchini isn't worth the result in my opinion which is why I won't be making this again.

Whoopie Pies VII

I live in Maine where we take our Whoopie Pies seriously. This recipe is not so much a whoopie pie as a tasty chocolate cookie sandwich. I took the advice of one of the reviews and used butter flavored shortening- my boyfriend loved the buttery flavor of the filling but personally I found it tasted odd with chocolate. Next time I will use regular shortening. The consistency and taste of the filling was otherwise wonderful and will use it again if I can find a better recipe for the cookie. I followed the cake/cookie part of the recipe exactly and the cookies were not nearly fluffy enough. They flatten considerably and even with only 10 minutes in the oven come out crispy along the edges because they're so thin. As a chocolate cookie it's tasty but a whoopie pie should be more cake-like. Again, not a bad recipe but definately not a whoopie pie.

Banana Crumb Muffins

These are the BEST muffins. I have made them a dozen times, at least. They're great for breakfast on the go or for a tasty snack. They don't need butter or anything, they're great all by themselves. A definite family favorite!

Foil-Pack Chicken and Broccoli Dinner

Very tasty! Quick and easy too. You definitely need to use some cooking spray on the foil or the stuffing sticks. I didn't have extra large heavy duty foil so I placed the chicken diagonally on the foil so there was enough room to tent it. Works just as well.

Layered Macaroni Casserole

This is a nice twist on a traditional Italian meal and relatively simple to make. The cottage and cheddar cheese as well as the chili pepper work suprisingly well. I give it four instead of five stars for a couple reasons. 1. I really think it's unnecessary to cook it as long as the recipe suggests. I simmered the sauce for 30 minutes and baked it for 30 minutes. With the time in the oven, the sauce is simmering a total of an hour anyway. It's really a simple recipe and 2 hours cook time is unnecessarily long. 2. I used a 13-in. x 9-in. x 2-in. baking dish and even spreading the sauce very sparingly there was not enough for three layers by far. There was an uneven amount of pasta vs. sauce. I would use more tomatos next time, probably another can of crused tomatos.

Yellow Squash Casserole

I've made this recipe dozens of times. One thing I'd have to say is that this recipe has a fine line for perfection. It can get soggy really easily. If you slice the squash too thin or add too much water to the pan the whole thing comes out a mushy mess. Cut the squash too thick and don't add enough water and it loses that wonderful buttery taste. That being said, when it is just right, this recipe is absolutely wonderful. It's definitely a five star favorite!
