Creamy Vanilla Pudding

Very easy, very tasty, but I reduced the sugar down to 1/3 a cup, and it was STILL very sweet! And I am sort of a sweet tooth, so I was surprised it was a little more than I wanted sweet-wise. Will reduce it a couple of TBS more next time, and I'm going to try cocoa powder as well.

Quick Nariyal Burfi (Indian Coconut Fudge)

1 tablespoon of cardamom is excessive! Not only is the spice pretty strong even in small doses, it's rather expensive, so I hesitated after sniffing my container and only put in a teaspoon. Even at that, it made a pretty strong presence, so I can imagine three times that would have made it inedible to me. The resulting candy was pretty good though, and if you are used to a strong punch of cardamom, I suppose the recipe as-is might be what you are looking for.

Teena's Spicy Pesto Chicken and Pasta

Very nice! I didn't have cilantro, so I used parsley as someone else suggested. Added a bit of onion and some sundried tomatoes too, and it turned out very well! I reduced the olive oil by 1/2 because the pesto had enough oil; it was plenty. I'll be using this as a good basis for a quick and easy meal from now on. It's even pretty and tasty enough for casual entertaining. Thanks!

Mama D's Italian Bread

Nice bread, and very easy. I didn't use a full 7 cups of flour as it wasn't necessary. Looks like the variation on humidity tip was correct! Bread was crusty on the outside and chewy on the inside. Made two loaves and some rolls which reminded me of german Brodchen (sp?). Will probably make again but it's not converted me to handmake all my bread. Oh, and I used basting brush to put on a little water instead of mister (had none). Seemed to work fine.

Roasted Garlic Mashed Potatoes

Like many before me, I had to "tweak" to make these them moist to my specifications. Added some heavy cream, sour cream and more cheese (hey, it was for thanksgiving! the calories don't count on holidays). I could have eaten the whole thing and skipped the turkey. As a note for people bringing to potlucks, I made the day before and reheated in a casserole dish @325 degrees for 30 mins in a toaster oven; worked great!

Tangy Honey Glazed Ham

Excellent. My first time cooking a ham and ham lovers raved! I personally am not a huge fan of ham and that is the only reason I didn't rate it 5 stars. Easy to make the glaze and basting wasn't as much a pain as I thought it would be. Going with a precooked sliced ham was a lifesaver; slices made it easy for the glaze to penetrate deeper than top layer. Ended up looking like it was a lot more work than it really was!

Lemon Pepper Green Beans

Very easy, very tasty. Used frozen and tasted nearly as good as fresh. Would cut down on the lemon pepper and butter slightly next time. Also, my first round of browning the almonds didn't go so well. Got caught up basting my ham and ended up with blackened almonds instead!

Crustless Cranberry Pie

My first cranberry recipe! VERY easy to make, pretty, and got compliments as the crumbs were being poked through. I would call it a cobbler more than a pie. I put the mix in a well greased 9x9 pyrex pan and then added a strudel top (brown sugar, butter, chopped walnuts) and it came out super! Gave the recipe to several people and am making more for my holiday trays right now.
