Bourbon Pecan Chicken

The pantry was getting low and I didn't have pecans or green onion. I decided to make this anyway using the walnuts I had on hand and followed the rest of the recipe to a T (minus the green onion, of course). This made an amazing sauce that complemented the chicken very well. My son is incredibly picky and said that this is the #2 best chicken he's ever had (next to chicken nuggets, of course). I enjoyed it and so did my other half. Adding this to the "make again" pile!

Sweet Potato Casserole II

This is a great basic recipe. I omitted the orange juice because I was looking for something similar to what my grandma used to make me and I know there wasn't any orange juice in hers. Also, I don't use margarine in my cooking EVER, so I just used butter in its place. Also, for consistency, I just mashed up the sweet potatoes. I think blending them until they're creamy would ruin the texture. With those small changes, this turned out amazing! :)

Aussie Chicken

I followed another reviewer tip of marinating the chicken in lime, garlic, and worcestershire and skipped the corn syrup. I didn't have mushrooms on hand, so I skipped those also. This was amazing! My fiancé is the pickiest eater I know and he went for seconds and packed some for his lunch the next day. That in itself is a miracle! :)

Mike's Homemade Pizza

Everyone in my household enjoyed this! I followed the directions almost to the T. I didn't have any dried marjoram, but I just so happened to have some fresh marjoram in the garden and used that. The sauce was really good. The flavor on the crust was lacking, but it did cook to perfection on the bottom rack of my oven. My fiancé likes a really thin crust and I like a nice, thick crust. I did 2 12" pies as the directions state and it was medium thickness, probably thicker than what my fiancé likes but almost perfect for me. I think this is a great starter recipe. Next time, I will try adding more salt or something to the crust. I wouldn't change much about the sauce though.

Mashed Potato Souffle

I really enjoyed this! I love the texture and the flavor! I didn't have light cream on hand, so I had to substitute milk and butter for that part. Definitely a make again for me!

Deep-Fried Turkey Marinade

The flavor was AMAZING. I took cues from other reviewers and injected mine with riesling wine and strained Italian dressing. Other reviewers also stated that it would be blackened and look burned, and that is exactly how mine looked as well. A guest took one look at it and started making comments about how dry it was going to be and how I still have "a lot to learn" (this is my first year being responsible for the important dishes). Well, he was eating his words while he was eating his turkey because the flavor and moisture levels were all perfect. I was very skeptical because of the ingredients but decided to trust the reviews. I'm so glad that I did! Will definitely do again. Only took off a star because of the ugly blackened color it cooks out as.

Chunky Chicken Noodle Soup

I made this on a chilly winter day and it was a hit with everyone! My boyfriend isn't a fan of peas, so I omitted the frozen peas and carrots and added more fresh carrots, celery, and onion. It seemed a little light on the herbs and spices, so I added more for flavor to suit my tastes. I thought the recipe would make enough to freeze quite a bit for an easy meal later (not that this is hard), but the crew left very little over and everyone commented several times on how yummy it was. I didn't think it was too watery or anything like that, I liked the consistency and this will now be my go-to recipe for my favorite comfort food!

Cheese and Beef Enchiladas

This was a crowd pleaser for all of the family, even my picky eaters. I used mild store-bought picante sauce, but I think next time I will use something with a little more flavor. I was skeptical about using turkey, but it was fantastic! Texture turned out great. I added fresh cilantro to top with as well and that added a ton of flavor! This is a great basic recipe that I will definitely make again and again and add to over time.
