About this Cook
When I retire, I know I'll be in the kitchen all day long. I love making a nice meal from scratch for my family. Not only do I feel accomplished, but the family is always so appreciative. The way to a man's heart is through his stomach right!?
My favorite things to cook
I recently switched to a mostly vegetarian diet and am learning to cook without meat as a main protein source. Vegetarian lasagna, pizza, and other Italian style foods have the flavor I love and are easily turned vegetarian. The family is still a pack of carnivores though!
My favorite family cooking traditions
I have a Pandora station dedicated to when I make spaghetti or pasta meals. It's the Bobby Darin station if you must know! That era of music just feels so perfect for making pasta!
My cooking triumphs
I'm just starting to dabble in cake decorating and have successfully managed to make a few beautiful fondant cakes... with a few flops as well :)
My cooking tragedies
I'm a clumsy cook. When I'm not chopping my fingers off on the mandoline, I'm reaching into the oven without a mitt. Usually the only thing that suffers is me!

Aussie Chicken
I followed another reviewer tip of marinating the chicken in lime, garlic, and worcestershire and skipped the corn syrup. I didn't have mushrooms on hand, so I skipped those also. This was amazing! My fiancé is the pickiest eater I know and he went for seconds and packed some for his lunch the next day. That in itself is a miracle! :)

Mike's Homemade Pizza
Everyone in my household enjoyed this! I followed the directions almost to the T. I didn't have any dried marjoram, but I just so happened to have some fresh marjoram in the garden and used that. The sauce was really good. The flavor on the crust was lacking, but it did cook to perfection on the bottom rack of my oven. My fiancé likes a really thin crust and I like a nice, thick crust. I did 2 12" pies as the directions state and it was medium thickness, probably thicker than what my fiancé likes but almost perfect for me. I think this is a great starter recipe. Next time, I will try adding more salt or something to the crust. I wouldn't change much about the sauce though.

Mashed Potato Souffle
I really enjoyed this! I love the texture and the flavor! I didn't have light cream on hand, so I had to substitute milk and butter for that part. Definitely a make again for me!
