Broccoli Ham Bake

Reviewed: Apr. 6, 2010
Really disappointed with this one. The stuffing mix along with the broccoli, ham, and cheese sauce just didn't work for me or any of us. None of my kids ate more than a few bites. Kind of upset I used my yummy ham leftovers on this recipe.

Tortellini Soup

Reviewed: Mar. 21, 2007
I was really pleased with this. It was so easy and quick! I used crushed tomatoes and chopped fresh spinach (I sauteed the spinach with a half a diced onion as well). I still hit it with a stick bender before adding the tortellini as my kids would eat it better with less chunks in it. Topped with plenty of parmesan cheese this was delicious!

Pumpkin Cookies I

Reviewed: Feb. 1, 2007
Not bad, but nothing special either. The pumpkin flavor was a little lacking, I think this needed some more spices, maybe some nutmeg or cloves. The kids liked them, but I don't know if I'll be making them again.

Slow Cooker Lentil and Ham Soup

Reviewed: Jan. 16, 2007
Eh, this was just okay. The long cooking time semed to make the ham kind of tough and lose its flavor (and it was a really good ham too). Everyone ate this, but the leftovers sat untouched in the fridge for a few days before I tossed them. Won't be making this again.

End of the Line Ham Casserole

Reviewed: Jan. 15, 2007
Initially out of the oven I was skeptical of this, it was really good! Even my kids (6 & 4) cleaned their plates. I used cream of mushroom soup and boiled my potatos first to cut down on the cook time. I really liked the way the ham came out a little crispy from being on top, yum! We'll make this again for sure.

Bulgur Stuffing

Reviewed: Nov. 23, 2006
I was so impressed with this! I wanted a change from the usual stuffing for Thanksgiving and this was a hit! The bowl was clean. I was so nice not to have a dish that was heavy as stuffing usually can be. I made the recipe exactly as printed, it was easy to. This will surely become a regular sidedish for us. Who knew bulgur was so tasty?

Cake Mix Cookies V

Reviewed: Nov. 11, 2006
I have been using this recipe for a few years now and just noticed that I have never reviewed it! This is my favorite recipe when I need to make some cookies in a pinch. I always have a cake mix, eggs, butter and oatmeal on hand, then I can add in whatever else is handy. We have done all sorts of combos using things like chocolate chips, toffee bits, coconut, raisins, nuts, white chocolate chips, etc. They are universally loved by everyone who has eaten one. I wouldn't say these are a top tier gourmet cookie, but they are so darn tasty considering how incredibly quick and easy they are to make.

Slow Cooker Creamy Potato Soup

Reviewed: Oct. 14, 2006
I really enjoyed this recipe, it was wonderful for dinner on a cold day. When I added the flour and half and half I took a stick blender to the pot to eliminate any lumps from the flour and to break down some of the potatoes. I left some chunky potato pieces, just pulsed it a few times. Made for a wonderfully thick and creamy soup. Instead of adding the bacon at the beginning I set it aside and let people top their bowls with crumbled bacon and shredded sharp cheddar cheese. Thumbs up from this household!

Cream of Broccoli Soup I

Reviewed: Oct. 4, 2006
I love this soup! We often have steamed broccoli for dinner and now when I do I prepare double the ammont and set aside the rest for broccoli soup later in the week. This recipe works really well with an immersion blender, easy to make everything in one pot and very little clean up required. Even my kids will eat this. Love it, 5 stars!

Carol's King Ranch Casserole

Reviewed: Sep. 1, 2006
This was okay, I was expecting a lot more after reading the reviews. The tortillas really ruined this for me, they didn't add anything texture/taste wise, only were a gluey chewey part throughout the casserole. Might make it again skipping the tortillas entirely.

Lasagna Roll Ups

Reviewed: Feb. 25, 2005
These were okay. I don't think there was enough sauce for the dish and the ricotta flavor kind of overpowered it. The whole family (kids and all) ate it up, but the leftovers had to be tossed because no one was interested in eating it again.

Slow Cooker Lemon Garlic Chicken II

Reviewed: Feb. 7, 2005
I have made this a couple of times now. The flavor is really good and we love it over brown rice. The sauce needs to be doubled to keep the chicken from getting dried out, the second time I just added a can of chicken broth to the mix. Makes yummy leftovers too!

Oatmeal Banana Raisin Coconut Cookies

Reviewed: Feb. 7, 2005
Yum! These were amazing! I used 1/2 butter, 1/2 margerine as that is what I had on hand. I also made them with whole wheat flour. Everyone loved them! Didn't taske cakey like most banana cookies do. Highly recommended here!

Apple Carrot Muffins

Reviewed: Oct. 30, 2004
I wasn't thrilled with these. I don't think the ingredients melded enough into a muffin and it seemed like I ended up with apple and carrot bits held together by a muffin shell. They got eated by by husband (my not so picky kids wouldn't touch them). I don't think I'll be making these again.

Slow Cooker Chicken Taco Soup

Reviewed: Oct. 30, 2004
This soup was fantastic! Unbelievable! It was even better the next day. I subbed chicken broth for the beer (don't like the taste) and a can of all white meat chicken in the last 2 hours (shredded) instead of the chicken breasts. It is great topped with a little shredded cheddar cheese and some crushed tortilla chips. My husband said I could make this once or twice a weeks and he would be thrilled. Thanks for the wonderful recipe!!

Apple Crisp II

Reviewed: Feb. 16, 2004
I absolutely adore this recipe! I picked several bushels of apples this year and we NEVER got sick of eating this crisp! I only used 1/4 of water and 1/4 cup of white sugar. I think the topping amount is perfect, however my hasband has told me he would like it even better if it were doubled. I wish I could give this more than 5 stars, it is wonderful!

Raspberry Lemon Muffins

Reviewed: Feb. 16, 2004
These were wonderful! I used fresh raspberries, whole wheat flour, and vanilla yogurt, my kids loved them too! I omitted the zest, but added a little more lemon extract in its place. I sprinkled the tops with cinnamon sugar, they were delicous!

Spicy Oatmeal Cookies

Reviewed: Feb. 16, 2004
I love this recipe!!! I now seem to overbuy bananas at the store so I'll have brown ones left to make these cookies. I use 2 bananas instead of 1 and use whole wheat flour, they are gobbled right up every time. Also wonderful with chocolate chips added!
