Scrambled Tofu

Really enjoyed making this - we added mushrooms and green peppers. The tofu seemed to added a nice velvety texture not the same as eggs but somewhat similar. Delicious!

I started making these for breakfast a couple of months ago and I'm hooked! I double the amount of wheat bran and use low fat margarine instead. With those two substitutions it seems like a pretty healthy start to the day, great recipe!

Strawberry Avocado Salad

This was extremely popular with my family! Cut down the white sugar amount by about 75% which was great because then there was just a hint of sweetness. Made a triple batch and there was barely any left over =]

Bow Ties with Sausage, Tomatoes and Cream

This recipe turned out awesome! I did what another commentor mentioned, which was to drain the sausage prior to mixing in the onion or garlic. Definitely helped cut down on some of the grease. I also may experiment with vegetarian ground beef (soy) next time!

Southwestern Casserole

This recipe turned out wonderfully! I ended up reducing the amount of jalapeno peppers because I was serving kids, and also subbed out the ground beef with Morningstar Meal Starts (it's pricey but the nutrition is hard to beat). Also used whole wheat pasta. Love the extra left over batch - it will be great for lunches this week!

Taco Casserole

Very tasty! We added sweet corn and black beans as two bottom layers like other comments suggested. Also used vegetable substitute meat instead of real ground beef. Overall that made it a very light, healthy and tasty dish! We only had to cook it about 15 minutes in the oven with those changes as well.

Chili Potato Burritos

This turned out to be a pretty spicy recipe and was a meal all by itself. I added corn, green pepper, and onion as one of the other commentors mentioned and that added a little more variety to the dish.

Raspberry Trifle

Light, not-too-sweet, crowd pleasing dessert. The raspberries add a nice contrast from the white filling and the cocoa adds a little zing. I ended up adding a little to much raspberry juice and the pound cake was a bit soggy. Everyone still loved it though!

Broccoli Ham Ring

I made this appetizer for a party we threw for my niece's first birthday. It was gone within minutes. A word of caution: make sure you slice the ring up into small enough pieces. Great recipe!
