Mom's Best Meatloaf

Wow!! This is the best meatloaf I have ever had! I did have to make a few substitutions because of things I had in my pantry...I used balsamic vinegar (didn't have any regular), V8 juice for the tomato juice and tomato paste instead of ketchup. My husband raved about the wonderful taste and texture....we will definitely be enjoying this recipe again and again and again......

Mandarin Orange Chicken

We loved this dish!! The only change I made was I threw in some water chestnuts for a bit more crunch. This is now one of our favorite chicken recipes!!

Anaheim Fish Tacos

We loved this recipe! I made way to much because I doubled the recipe (we were supposed to have company...they couldn't make it)...so I served the left over fish with rice and it was spectacular! I am going to use the same basic recipe but substitute shredded chicken for the fish....yum!

Skillet Chicken Cordon Bleu

This was a wonderfully easy dish to prepare! Like some of the other reviewers, I used the low sodium soup and it turned out great! To make it a bit more saucy, I added about double the wine called for...yum! This reminded me a bit of the fondue that my mom used to make with white wine and swiss cheese! I served this over the egg noodles, but I think rice would work out well, or serve it in a hollowed out round of sourdough...stew style! Great recipe....definitely a new staple to our house!

Mom's Ginger Snaps

I love these cookies! I followed the recipe exactly as written and they turned out perfect each time. I used "Brer Rabbit" unsulphered molasses which I liked better than "Grandma's" brand. To dress them up a bit, I dipped half of the cookie in white chocolate...it gave them a super creamy flavor and special presentation!

Blue Cheese Ball

This was delicious! I didn't change anything about the recipe except I served it as a dip, not a ball...of course I used insanely good bleu cheese from Rogue Valley Creamery in Oregon. I served it with some really good crackers and slices of crisp apples.

Bill's Blue Cheese Dressing

I am a bleu cheese lover and this was THE BEST dressing I have had! I admit that I make a pilgrimage up to Oregon to purchase gorgeous Bleu Cheese from The Rogue Valley Creamery. The only change I made to this recipe was in the preparation....I made BIG crumbles of my bleu cheese and used my electric mixer to incorporate all the ingredients....it left me with a fantastic creamy and chunky dressing. I used it for a nice dip as well!

Fluffy French Toast

This is FANTASTIC! I have been looking for a nice French Toast recipe and this is perfect. It does fluff up nicely, which makes it so much lighter and yummy. I used Kings Hawaiian bread and added a touch of orange zest and orange extract. French Toast Perfection!

Joey's Peanut Butter Cookies

Wow! This is a fantastic recipe! I didn't make any changes to the dough other than add 1/2 cup choc chips (Hubby's request!). We both love the tenderness of the inside and the delicate crispiness of the outside. I baked mine on parchment paper, which I do for anything I bake and I used the convection setting of my oven at 325 degrees for 12 minutes. They are perfect!
