Fiesta Pinwheels

Excellent and EASY way to be the hero of the next potluck! Flavorful and forgiving recipe that can easily be changed to suit individual tastes. I left out the olives, and used 1 tbsp. chili powder with a small quantity (maybe 1/4 tsp or so?) of cumin in place of the taco seasoning. I cleaned the mixing bowl with pieces of leftover tortilla but those calories do not count.

The Best Banana Bread

Exact same recipe my great-grandma used, except she only used 3/4 cup of sugar. Always wonderful, always forgiving-you can use anywhere from 2 to 5 bananas with success. Excellent

Becky's Chicken Salad

Whipping cream and whipped topping are NOT the same thing! Miracle Whip is NOT mayo! Now that I've said and repeated these two crucial things, I must say this chicken salad is outrageously good. I do make a couple of changes: a little more cream and a lot less mayo (I'm a mayo hater...still, it does not ruin this salad for me at all!) I add a chopped apple and just an extremely tiny sprinkle of cayenne pepper. Wonderful and I will be serving it at my daughter's baby shower!

That Good Salad

Can't remember if I've ever had a salad that was as good as THAT GOOD SALAD. It really lives up to its name! I scaled down to seven servings (for one head of romaine) and was concerned whether this salad would be fine for leftovers in the metal bowl I had. No worries! DH and I ate EVERY BITE of those seven servings in one sitting! I think you could leave out the almonds if that's what's stopping you from making this; almonds are yummy but they didn't play a starring role. Delicious!

Baked Homemade Macaroni and Cheese

This is a wonderful base recipe, which EASILY replaced Alton Brown's in my recipe book. Made as written the first time and my rating is on that basis. Second time I made it using sharp cheddar, and added 1/2 tsp paprika, 3 dashes of Red Hot Sauce, and some black pepper to the white sauce mixture. Didn't add the melted butter to the crackers, either and it was still a much better topping than bread crumbs.

Cinnamon-Roasted Almonds

I did the same "upgrade" as others did- adding brown sugar and some vanilla extract with the egg white. A touch more cinnamon too...yeah, I know I'm not rating the original recipe, but these are so yummy I don't think anyone will really care. My house smells like a delectable bakery and these are frighteningly addictive.

Thanksgiving Flavored Turkey Burgers

By all means, make this recipe! The only changes I made were to use less butter to cook the onion and celery, and I use light cream cheese (NOT fat-free which is a salty, terrible trade-off). Whole berry cranberry sauce rocks- I stir it right into the cream cheese. PINK and also delicious on ordinary turkey sandwiches!

Awesome Spicy Beef Kabobs OR Haitian Voodoo Sticks

If you like spicy, try this recipe! Made as written, I gave five stars. Hubby would have given three as he doesn't have as much appreciation for spicy foods. Next time will tone down the cayenne just a hair and put in pitas with cucumber sauce- that'll shut him up...

Yummy Honey Chicken Kabobs

YUMMY is indeed an accurate description! I'd have no hesitation on making this for company, but Hubby and I will probably enjoy this many times all by ourselves. :-) Adding fresh pineapple was the only change I made here. Doing separate skewers for meat and veggies is a great plan, but all seemed to get done about the same time. You won't be sorry if you make this dish.

Morning Glory Muffins I

These are excellent...I'll be grabbing one every day next week as my on-the-go breakfast! My only changes were using all whole wheat flour, adding the walnuts to the flour mixture with the other fruit, and skipped the wheat germ. I don't advise making on a rushed weekday morning unless you have a good food processor...these take a little prep time but are worth it!

Lemon Pepper Chicken II

Very good and extremely easy! I followed other reviewers' suggestions and went with the kool-aid packets without sugar. Used fat-free italian dressing. I thought the dressing would overwhelm the lemon but it didn't. Excellent for a weeknight...thank you!

Venison Tips and Rice

Apple Stuffed Chicken Breast

I really hate it when people make major changes to a recipe and then proclaim it terrible. But this time I made some changes and came out with an excellent dish that picky DH and I loved. I quickly realized I had to butterfly my chicken breasts since they were really thick. I used the often-suggested brown sugar/cinnamon addition with the apples, browned the chicken in olive oil, and used all chicken broth for the cooking liquid. I also added in a chopped shallot with the broth (simply because I had to use it or lose it...I'll probably chop a bit of onion when I make it next time.) The cornstarch pan sauce is SO simple. Even a novice cook could impress company with this dish.

Citrus Turkey Brine

This recipe made my fresh boneless turkey breasts moist, tender, and flavorful this Thanksgiving (finally!) Added 1/2 cup white sugar to the brine, and dissolved the salt in the water too. After brining I just rubbed the skin with olive oil and roasted as usual. A great choice using ingredients folks normally have on hand.

Apple Crisp II

Shame on me for only making a half recipe! I could have eaten an entire 13x9 of this! I always pay attention to the reviews so, like many others, I cut back on the water, added a dash of nutmeg to the apples, and (what the heck) doubled the topping. I've always thought of crisps and cobblers as humble weeknight desserts...but I'd be proud to serve this one to company. I'm sure it would do just as beautifully with other fruits, too. This is THE recipe for apple crisp!

Buttery Soft Pretzels

My first try at making pretzels. Success! This recipe is terrific. I used only 4-1/2 cups of flour. It made very pliable dough which was easy to roll out on a clean, unfloured surface. I didn't roll my dough pieces long and thin enough before shaping the pretzels so they came out chubby-my bad! After their soda bath half of them got salted and half got cinnamon sugar. They had plenty of buttery delicious flavor without further addition of butter. I'll make again and again!

Restaurant-Style Buffalo Chicken Wings

Excellent recipe, which I doubled! I will probably use less butter next time- hubby could actually smell the butter on the finished product...but he was not complaining about the taste. He ate 14 of them! Obviously we will be having again soon. Delectable!

The Best Meatballs You'll Ever Have

On basis of the reviews I made a double batch of these. Don't be afraid of the spice here...the combination works very well. The only alteration I made was baking at 375 instead of sauteeing. Very flavorful and with terrific texture! Next time I will probably add parmesan cheese...thank you!
