Cabbage Rolls
I really enjoyed this recipe but I didn't follow it exactly due to an error on my part. When I microwaved the cabbage, I overcooked it. So I chopped up the cabbage and mixed that and the tomato mixture in the rice mixture. I omitted the bay leaves. I baked it in 2 9x13 casserole dishes according to instructions. My family (who doesn't like cabbage) ate it up! This new "cabbage roll casserole" as I call it is a winner. It does need a crunch so I'm thinking a bread crumb topping.

Beef and Bean Chimichangas
I made a few changes to accomodate what I had on hand. I used 1 can of diced tomato and a packet of taco seasoning instead of taco sauce, a can of ranch style beans instead of refried and I mixed everything together (minus the tortillas, butter, lettuce and tomato) and served with chips. I originally tasted it and it tasted like chili. So I added another can of diced tomatoes and it was great. We all loved it. I will definitely make it again but reduce the chili powder.
