Spicy Hot Chicken Legs

This is SO Yummy! This was an immediate and enthusiastic winner with my 3 teens and husband!! I followed the recipe except I used a combination of legs and thighs, added a couple of dashes of Liquid Smoke, and used less butter - only 1 T. I removed all the skin from the chicken - it was very moist and the flavor was awesome. I did place in 400 oven for 30 minutes after the Crockpot. I served it with hot cooked buckwheat and we spooned the excess sauce over the chicken and the grain -- rice or any other grain would work just as well. I will definitely make this again as it was a real family pleaser.

Tofu Parmigiana

Delicious!! I don't cook with Tofu often but this is a keeper. My teens were suspicious of the ingredients before tasting but after the first bite, there were no more questions as they quickly cleaned their plates. Only later did they deduct what they had eaten. I served with spaghetti and extra sauce and cheese, but is delicious by itself also. I froze the tofu for 30 min. before slicing, then baked slices 12 minutes as suggested before dipping in ricemilk/flax seed (rather than water) then crumb mixture, then frying. Next time will likely bake rather than fry after coating. I used homemade spaghetti sauce. Thanks for a great recipe.

Raw Brownies

Yummy treat!!! These disappeared within hours - I could not keep my 4 kids out of them. Decreased walnuts to 1 2/3 c. and made up differnce with ground flax seed. Added 1 T. or less of PB, and subbed a bit of molasses for honey I was lacking. Will make again.

Cinnamon Hazelnut Biscotti

Delicious!! So yummy dunked in coffee or hot chocolate. I tripled the cinnamon and used walnuts I toasted 8-10 minutes in oven first. Family likes this first attempt at Biscotti!! Will make again!

Orange Almond Biscotti II

Tasty! My family has enjoyed these. I drizzled some melted chocolate chips along one side for a nice effect. Had to bake slightly longer than the recipe indicated to get them crispy.

Clam with Tomato and Rice Soup

Wonderful, tasty soup!! My entire family ate this eagerly, even my 4 children who have rarely eaten clams. Very hearty and satisfying- a delicious tomato soup. Will make again.

Pumpkin Pancakes

These are so Yummy!! Wonderful flavor, light and fluffy, good spices. Good fall/winter breakfast to start the day, with added nutrition over plain pancakes. This recipe is a keeper!

Easy Granola Bars

Best granola bar recipe I have found! My family loves these bars!!! A definate keeper and one I will make often. These don't last long at my house! Delicious, easy to make, wonderful chewy texture. Dried papaya tidbits work well in place of craisens.
