Baked Pineapple

This recipe is amazing, I made it for my family for thanksgiving and followed another reviewers suggestions to decrease the sugar to 1/2 cup but I kept the 1 tbsp vanilla. I used fresh pineapple instead of canned and kept the 1/4 cup water. I put it all into a food processor so it was very smooth and there were no pineapple lumps and it came out like a gorgeous, gravy consistency custard my family used it as a gravy and put it on top of their turkey. It was the perfect balance between sweet and tart, loved everything about it.

Spinach and Potato Frittata

This tasted very good, after some additions. I added bell pepper and mushroom as well as a bit of nutmeg, dried basil, cayenne and chili pepper and doubled the amount of cheese and spinach. However, I still felt that something was missing so I think next time I'll add more cayenne to give it a little more kick.

Strawberry Cake from Scratch

This was very good! I made a few changes though. 1. I didn't have cake flour so I used normal all purpose flower and 4 tsp of baking powder. I remeasured the flour after sifting like other viewers suggested. I also didn't have any gelatin so I omitted it completely and put in 1 cup of puree instead of 1/2.I put the entire batter in a 9x13 glass pan and cooked it for 40 minutes. It came out very delicious, slightly dense, but not enough to bother me or anyone who ate it. I also made a strawberry cream cheese icing for it using 4 oz cream cheese, about 1/4 cup pureed strawberries (strained to remove seeds), 2 tbs heavy cream and 1 cup of confectioner's sugar. Oreo® Cookie Cake

This was delicious!! I followed the suggestion to use only 1 packet of cream cheese and because I'm a cheesecake lover, I regretted it. It just ended up being an overwhelming amount of whipped cream and I wanted to taste more of the cream cheese. However, it was still very good, next time, I plan on using 1.5 packets or maybe even all 2. I also used chocolate pudding instead of vanilla. The more days that passed, the better it tasted each day. It is very rich and full of empty calories so I would only make once in a while

Best Brownies

Absolutely delicious! I doubled the recipe and used salted butter because that's all I had on hand and just a pinch of salt since the butter was already salted. I also took another reviewers advice and halved the amount of powdered sugar in the frosting.This made it very easy to mix and I didn't need to spread it, I just poured it onto the brownies. They baked for 26 minutes and were the kind that stick to the roof of your mouth which I absolutely love! The frosting added nice texture but I might omit it next time, just to cut out on the amount of sugar.
