Soba with Toasted Sesame Seed Sauce

Yum! Followed recipe with one additional step. I placed the chopped broccoli into the collander and drained soba over broccoli. This provided just enough heat and steam to bring out the tenderness and vibrant green of the broccoli.

Healthy Banana Cookies

Healthy Banana Cookies is my go-to recipe for overripe bananas. I place brown bananas in freezer until I collect three or four. Let them thaw overnight in refrigerator and they are ready in the morning for baking. Substitute different dried fruit for the dates to add variety.

Crustless Cranberry Pie

Perfect as-is. Can substitute 1/4 cup + 2T oil (olive tastes good but leaves hint of green) for butter. Can use frozen cranberries, increase bake time or switch to convection bake.

Flourless Peanut Butter Cookies

Perfect as-is. Can substitute almond butter for peanut butter. Use small or medium cookie scoop to form, then flatten and crisscross with fork. To avoid crumbling, give baked cookies a few minutes to rest on tray before moving to cooling rack.

This is our family's go-to cucumber recipes. Five stars for simplicity (ingredients and process) that makes a pretty, bright, & flavorful salad with nice texture that compliments spring & summer meals. Marinates well over several days in the refrigerator.

Three-Berry Lemon Trifle

Perfect summer dessert, easy, flexible, delicious! The first time I made this as written. Today I whipped heavy cream and substituted for whipped topping, used fresh peach and frozen blueberries, orange zest instead of lemon. Can't wait to make more varieties.

Spinach Basil Pesto

Simple and flexible recipe with a bright flavor. Great way to use abundant spinach. When I don't have basil I increase the spinach to replace basil and add dried basil for flavor; not exactly pesto but tasty. I also substitute pine nuts with pecans when necessary.

Italian Dressing Mix

I've been using this recipe for years and keep this Italian Dressing Mix in my pantry at all times. I use it to make salad dressing in a pinch, but more than that I season everything from soup to eggs to cream cheese with this mix. I omit the salt so that I can add it to other recipes that are already salted; I just need to remember to salt the dressing. Thank you for this recipe, Debby!

This Tomato Zucchini Casserole is smart, easy, flexible, and delicious. Perfect for times when zucchini and tomatoes are abundant. I especially appreciate that I can use different cheeses and don't really need to measure ingredients; just get it in the casserole pan, bake, and enjoy.
