Simple Carrot Soup

Grandma's Iron Skillet Apple Pie

5 stars for the brilliant idea to make pie in a cast iron skillet! I'm content with skipping the middle crust and using Trader Joe's pie crusts that fit my 12" skillet perfectly. After you've enjoyed this delicious apple pie, try other fillings and serve this no-fuss, homey dessert anytime.

Tomato Zucchini Casserole

This Tomato Zucchini Casserole is smart, easy, flexible, and delicious. Perfect for times when zucchini and tomatoes are abundant. I especially appreciate that I can use different cheeses and don't really need to measure ingredients; just get it in the casserole pan, bake, and enjoy.

Italian Dressing Mix

I've been using this recipe for years and keep this Italian Dressing Mix in my pantry at all times. I use it to make salad dressing in a pinch, but more than that I season everything from soup to eggs to cream cheese with this mix. I omit the salt so that I can add it to other recipes that are already salted; I just need to remember to salt the dressing. Thank you for this recipe, Debby!

This is one awesome sandwich! Delicious crowd pleaser. I especially appreciate that the olive salad is made ahead of time; making the sandwich is a breeze. Once the sandwich is made, it travels well. Seriously would give this 10 stars for great taste + satisfying + ease. Thank you!!!!

Easy Batter Fruit Cobbler

Perhaps the texture was off because I used a convection oven to bake, but I didn't like the edges that became butter/flour/sugar crisp enough for me to need kitchen scissors to cut through them. My search continues for a quick baked blueberry snack.

Spinach Basil Pesto

Simple and flexible recipe with a bright flavor. Great way to use abundant spinach. When I don't have basil I increase the spinach to replace basil and add dried basil for flavor; not exactly pesto but tasty. I also substitute pine nuts with pecans when necessary.

No Crust Pumpkin Pie

Keeper! As others have noted, it took longer to bake than noted, and is worth every minute. It is reminiscent of flan but fluffier and the "crust" takes on a slightly toasted meringue flavor. Easy and fun!

Remove hulls per MUSIC_MINX (TY!) Can substitute jarred roasted peppers (use/adjust liquid) for fresh, sesame seeds for tahini, lemon for lime juice, fresh garlic for powder. Flexible! So creamy via VitaMix.

Three-Berry Lemon Trifle

Perfect summer dessert, easy, flexible, delicious! The first time I made this as written. Today I whipped heavy cream and substituted for whipped topping, used fresh peach and frozen blueberries, orange zest instead of lemon. Can't wait to make more varieties.
