Filet Mignon with Rich Balsamic Glaze

BEST FILETS I HAVE EVER HAD!!!! My boyfriend and I loved this recipe! Never thought filets could get so tender in a pan! EXCELLENT recipe! Made it with the garlic red potatoes and parmesan asparagus from this website! Delish dinner!!

Chicken Quesadillas

Awesome!! I marinaded the chicken in Grill Mates Chipolte Pepper all afternoon, then grilled them on the foreman. Then cubed the chicken and mixed it in with green and red peppers, diced green chilies and one can of rotell with green chilies. Used a mexican blend of cheese. Turned out awesome and now I have lunch for the week as well!! They reheat wonderfully!!

Turkey Macaroni Bake

If I were to make this again I would definitely cook the macaroni atleast halfway through before putting it in the oven. All the macaroni did not cook all the way through and was hard. Other then that not a bad recipe, added a bag of frozen veggies, cauliflower, broccolie and carrots. Needs more flavor though and definitely do not add the macaroni without cooking it a bit prior.

Southwest Chicken

This was great! I used my crock pot because I had read that some others had done it this way. I used frozen chicken breasts and put GrillMates Chipolte Pepper marinade all over the chicken and put them in with 2 cans of diced tomatoes with green chilies and a little bit of salsa. I let that cook on low for about 4 hours. Then I added 2 cans of black beans and 2 cans of the mexicorn. I let that simmer for another 2 hours and then shredded the chicken. We used flour tortillas, added some shredded cheese and sour cream and they were yummo!!! And I have tons of leftovers because I always make more so I can freeze!! Thanks for the neat recipe, will have to try it the way it was meant to be sometime too!

Easy Baked Tilapia

Chicken and Corn Chili

Oh so yummy!! I always stray from the original recipe some. I used frozen chicken breasts and cubed them after it cooked for a while. I added a can of diced tomatoes chili style, medium salsa, black beans, pinto beans, kidney beans, diced green chilies, mexicorn and white chicken chili seasoning. I also used a little chicken broth so it wouldn't dry out. It was excellent! Served with tortilla chips, sour cream and shredded cheese! Can't wait for lunch leftovers :-) Thanks for sharing.

Taco Pie

This was pretty good. I added one can black beans, one can mexicorn and one can diced tomatoes chili style. I used taco shredded cheese and served with sour cream and salsa. Very good looking forward to leftovers!

Slow-Cooker Chicken Tortilla Soup

FABULOUS! I threw frozen chicken breasts and cooked with everything else. I used diced tomatoes, one can plain, one can with chilies. I did not use onion or garlic or cumin and in place of chili powder I tried chicken chili seasoning. Definitely better than tortilla soups I've tasted in restaurants! This one is definitely a keeper, I shared it at work and everyone raved about it and now wants the recipe! Thanks for sharing this fabulous dish!!

Zesty Slow Cooker Chicken Barbecue

EXCELLENT! Took other reviewers' suggestions...cooked the chicken for 4 hours in chicken broth...fell apart when i went to shred it...threw it back in the crock pot with the bbq (I used Bulls Eye) mixture just as in the recipe minus the worcestershire sauce. Served it with a salad and crinkle fries. Boyfriend loved it. Can't wait for leftovers for lunch as I always double my recipes :-)

Enchilada Casserole III

This was great and easy to make. I strayed from the recipe and used canned enchilada sauce from other reviewers suggestions. I also added hot taco seasoning to my ground meat as well as one can of chopped green chilies and fresh diced plum tomatoes. Mixed the refried beans in and also added Texas Pete's hot sauce. I used mexican blend shredded cheese...yum! Next time (and there will be a next time) I will go by other users suggestions of crisping the tortilla chips first before layering and baking. Served with salsa and sour cream! All in all this was a great recipe, especially on Cinco de Mayo!

Garlic Chicken

This was pretty good...I'm not a big fan of garlic but thought I'd give it a try...I used real garlic that I pressed and olive oil...seasoned bread crumbs and I forgot the parmesan cheese...I don't think it would nake a difference, but when I make this again I'll try it with the cheese! All in all this was good, boyfriend liked it and I would make again.

Cajun Chicken

Great recipe! Always looking for something different to do for our Sunday Phillies game tailgates, tried these yesterday and they were a hit! Had some cajun seasoning I got earlier this year at the flower show, so I tried it out. I did let the chicken marinade overnight and I used olive oil because I did not have veg oil, turned out moist and yummy! Will definitely make again this summer before a Sunday game! Thanks for the recipe!

Crab Quiche I

Another excellent quiche recipe! Also made this one for mothers day, I used 2 full cans of lump crab meat, old bay seasoning, two extra eggs and a monteray/cheddar cheese mix. It got rave reviews from my family! Definitely a keeper and one I will make again!

Quiche Lorraine I

Excellent recipe! Made it for mother's day this past weekend and it was a hit. I did change it a bit, I sauteed onion in the bacon grease, used half and half (1 to 1.5 cups) and added an extra egg. Will definitely make this again for special brunches!

Basic Chicken Salad

Great basic recipe! My first time making chicken salad and everyone gave it rave reviews! Didn't change much, but did add some garlic powder, minced onions and plenty of salt and pepper! Made it for mother's day lunch and it was wonderful! Plenty leftover for lunches this week too! Thanks for the great recipe!

Three Cheese Baked Pasta

Great recipe! A little time consuming but worth it! I used 1/2 lb of ground meat and about 3/4 lb of sweet italian sausage for added flavor. I also used chopped onion, some minced onion, garlic powder and some italian seasonings. I also mixed the sour cream in with the sauce instead of layering it. Family loved it and I still have half the pan in the freezer! Thanks for the recipe!

Spinach Stuffed Chicken Breast

FABULOUS! I made this for my mother's birthday dinner this weekend it my whole family gave it rave reviews and all 6 of us gave it FIVE STARS! I scaled the recipe to serve 8, and it called for 8 cloves of garlic - I only used about 4 and it was just enough. I also used a mexican blend of cheese since I don't have a cheese grater and it will still delicious! I will be making this again and I do want to try it with the pepperjack cheese! Homemade Lasagna

My first time making lasagna and it was fabulous! Excellent recipe! I doubled the sauce and will now be making my own sauce for any kind of pasta! I did tweek it a bit by adding 1/2 lb of sweet italian sausage instead of pork and 1/2 lb ground meat. I also used fresh basil, fresh bay leaves, alittle bit of italian seasonings. I also used a blend of small curd cottage cheese and ricotta along with the parmesan and mozzarella. My boyfriend and daughter gave RAVE reviews! This will definitely be made once a month from now on and I will be making my own sauce instead of jar bought! Thanks for the wonderful recipe Craig! I have leftovers and there's some in the freezer!

Chicken and Cheese Crescents

These were wonderful! I did cook the chicken in half of the soup mixture with some milk and I also added some lemon pepper seasoning to the chicken. I rolled them with some cheddar cheese and put them in the pan with a small amount of soup mixture around them. Cooked them for about 10-15 minutes and then covered them again with cheese and poured some of the soup mixture over them We loved them!! Boyfriend said they were worth 4 stars....will make again sometime! Thanks for the recipe! Wonder what it would taste like if it were a pot pie filling with some veggies? Might have to try that! Thanks again for the recipe!

Awesome Roast Beef

Great recipe to begin with! I did add potatoes, carrots, red and green peppers about 4 hours into the meat cooking! The mixture of the cream of mushroom soup and the beef broth was wonderful! The meat was so tender, I suggest a bottom round roast. Will definitely make this again on a cold winter weekend!
