Better Cheddar Chicken

I had to make a few changes based on what I had on hand - used panko instead of corn flakes, and used crushed red pepper instead of the cayenne. My family and I absolutely loved it. My husband loved the crumb mixture so much he practically licked the pan :) The chicken breasts I used were pretty thick so I had to use the full 40 minutes to cook and they came out nice and juicy. I will definitely make this one again.

Cashew Chicken I

Used lightly salted cashews and sweetened coconut because that is what I had on hand. Marinated the chicken breasts in coconut milk for several hours and then dredged them directly into the cashew/cracker mix (no butter). The family loved this and requested that I make it again.

Slow Cooker Thai Pork with Peppers

My family loved this. I needed to double the recipe which ended up with the sauce being a bit too soupy. Next time I will cut back on the liquids a bit when doubling. Didn't have peppers, so I added broccoli, carrots, and pea pods (towards the end of the cooking time so the veggies would still have some firmness). So yummy! Will definitely make again.

Famous Butter Chicken

This was delicious!! Even my boy who doesn't like chicken gobbled it up. I used Club crackers (it's what I had) and it tasted great with them. Will definitely make this easy recipe again.

Olive and Blue Cheese Ball

I took this to a potluck and it was the hit! Everyone wants the recipe. I used a marinated olive and red pepper mixture (Mezzetti brand) which was really good. The bleu cheese flavor is very subtle.

Pesto Cheesy Chicken Rolls

I also did not flatten the breasts - just spooned some pesto over them and then added cheese on top. They baked for about 30 minutes total (20 min covered, 10 min uncovered). The whole family loved it, and I will make it again. It is extremely easy. I even prepared it ahead of time, covered it with foil, and stuck in the fridge until I was ready to bake it. Worked great!

Chicken Tortilla Soup I

My family and I loved this soup. Really the only change I made is that I sauteed the chicken in the olive oil with the onions and garlic. I added the other ingredients and let it simmer for about 40 minutes. At the table, we just crunched up some corn tortilla chips on top of our bowls, which was delicious. I will definitely make this again.

Debdoozie's Blue Ribbon Chili

This is great chili. The only change I made was using some V-8 juice in place of the tomato sauce (it was about half sauce half juice). My family loved it, and I will most definitely be making this one again!

Chicken Noodle Casserole II

I made this pretty much as written, with the exception of adding a full bag of egg noodles (12oz). The whole family ate it up (including the picky ones), and I liked it too. The only issue was that it was too dry - I should have doubled the sauce since I added so much more noodles. Next time I will do that!

Salsa Chicken Rice Casserole

Made some minor adjustments - a little less rice, 2 cups of cheese instead of 4, omitted the mushroom soup, and used a can of Rotel in place of the salsa, and added some chopped veggies. The family loved it, and I will definitely make it again.

Pizza Pinwheels

I made these using the Garlic Butter flavored crescent rolls. My family absolutely loved them, as did my book club group. I didn't even bother with the pizza sauce - and didn't miss it. Will definitely make these again next time I need a quick appetizer.

Corn, Sausage and Pepper Chowder

My family loved this. The only changes I made were that I used a spicy sausage, and left out the peppers (there were peppers in the sausage). I made it early in the morning, put it in the fridge, and then reheated it for dinner. The flavors blended wonderfully. I will definitely make this one again.
