Better Cheddar Chicken
I had to make a few changes based on what I had on hand - used panko instead of corn flakes, and used crushed red pepper instead of the cayenne. My family and I absolutely loved it. My husband loved the crumb mixture so much he practically licked the pan :) The chicken breasts I used were pretty thick so I had to use the full 40 minutes to cook and they came out nice and juicy. I will definitely make this one again.

Cashew Chicken I
Used lightly salted cashews and sweetened coconut because that is what I had on hand. Marinated the chicken breasts in coconut milk for several hours and then dredged them directly into the cashew/cracker mix (no butter). The family loved this and requested that I make it again.

Slow Cooker Thai Pork with Peppers
My family loved this. I needed to double the recipe which ended up with the sauce being a bit too soupy. Next time I will cut back on the liquids a bit when doubling. Didn't have peppers, so I added broccoli, carrots, and pea pods (towards the end of the cooking time so the veggies would still have some firmness). So yummy! Will definitely make again.
