Black Bean and Corn Quesadillas

Yummy! I served with Spanish rice & sour cream. The only thing my family agreed needed changed was the amount of heat. I'll spice it up next time.

Coconut Custard

I love baked custard & it's even better with coconut & raspberry. Excellent flavor but a little chewier on top than I expected. I might make it again & chop my flaked coconut finer & use 1/4 tsp coconut extract & less vanilla. The footnotes & the picture for this recipe have nothing to do with it & should be deleted.

Baked Custard for Two

Basic baked custard recipe for two came out perfectly baked 45 min in my Breville smart oven. I'm always looking for recipes that fit a small oven. I used fat-free lactose free milk but if you like a richer custard use whole milk. As other reviewers have said overbaking damages the custard so experiment & adjust your baking time accordingly.

Black Bean Soup with Salsa

Delicious, nutritious and quick dinner. I added a cup of cubed ham, and served with corn bread. My whole family enjoyed it. Tastes even better the next day. A keeper!

Jill's Vegetable Chili

This recipe was fast and easy to make with items I always have in the pantry. I used cubed dark meat turkey instead of breast meat. My family thought it was too mild and needed some spicing up so you might want to increase the spices to your taste. Sour crean added a nice flavor but the chili still could have been thicker.
