Chef John's Baked Acorn Squash
I make this a few times a month. My hubby (Chris, the Veggie Hater) loves it! I only change it by using lite whipped butter and skipping the brown sugar. Maple syrup seems to be enough. I also use the microwave to melt butter, syrup, etc. works out fine. Chef John is becoming my "go to" guy. Love him!

Tuscan Flank Steak
I make this almost every month. My hubby can't can't get enough. He even came up with the idea of buying several steaks, marinating them, then freezing. That way we can have them in a moments notice! Tastes just as good!

Aimee's Mashed Cauliflower 'Potatoes'
This recipe turned my hubby from a cauliflower hater to a lover. He even said he wouldn't mind having these instead of mashed potatoes!! I skipped the cheese, and used a light whipped butter for a less calorie version.
