Marinated Grilled Chicken II

I've been making a version of this for years. I bought a bottle of store brand, reduced fat Caesar dressing a while back (I know, what was I thinking?)It was HORRIBLE! Of course I couldn't throw out a nearly full bottle of dressing, so there it sat in my fridge for months. One day when I knew that I wouldn't have time to fuss over dinner prep. I took 4 chicken leg quarters, put them into a zip lock bag with some chopped fresh onion and garlic. I looked at the bottle of dressing and said "what the heck?" Poured some into the bag and let them marinate in the fridge for a few hours. Popped them into a 375 degree oven for about 45-60 mins. and OMG were they good! So now, when that lousy dressing is on sale, I make sure that I by couple of bottles. I just have to warn people not to put it on their salad!

Garlicky Quinoa and Garbanzo Bean Salad

As written, I was torn between 3 & 4 stars. If I could have given it a 3 1/2 I would have. I felt that it was basically pretty bland. Also, I wasn't too trilled with the mustard taste coming through which surprised me as I thought that I would have had a problem with that much lemon, but it gave it a nice, bright note without being too overpowering. I ended up tossing in some dried cranberries, sautéed orange sweet pepper and red onion and chopped walnut and almonds that I fist toasted in a skillet. I'll definitely make this again, but with my modifications.

Mushroom Pork Chops

I have been making this for many years and love it. It's easy, quick to put together and delicious. One usually has all the ingredients already in the pantry to boot. I've also "fancied it up" by adding a little wine, Worchestershire sauce, tarragon or whatever strikes my fancy at the time. It's pretty much a foolproof recipe as long as you take care not to overcook the chops. By the way, this is also an excellant way to cook chicken. I'm just sayin'. :-)
