Easy Risotto-Style Rice

Easy and tasty! I didn't have chicken broth so used boullion, which I think made it a bit too salty. Next time I'll make sure to have broth on hand (probably low-sodium). A great, easy way to make plain rice more interesting.

Ranch Crispy Chicken

I only used one package of ranch dressing mix and I still thought it was a little salty. My boyfriend loved it, I couldn't believe how much he ate! He has requested that this one become a regular. I loved that it was super easy and quick!

Baked Pork Chops I

Turkey Veggie Meatloaf Cups

I was really excited to try this recipe, and was kind of disappointed. I found the texture wasn't great, it was a little soggy. I'm going to try it again, probably with half the amount of zucchini and coucous, and maybe add some bread crumbs like other people suggested.

Fettuccine with Sweet Pepper-Cayenne Sauce

Delicious! The only change I made was to cut back on the cayenne, started with 1/4 tsp and that was plenty for my delicate tastebuds. I also made half the amount of pasta and the full amount of sauce, because we prefer saucy over dry.
