Roasted Red Potato Salad

This is sooo good! It's not like your typical deli potato salad but I love it! I did change things up a bit. I can't have eggs so use Just Mayo (vegan), added twice as much celery, a whole red pepper (instead of the green), a whole bunch of green onions, a handful of parsley (chopped) and more bacon. Perhaps 10 slices. Just grabbed some. Didn't really count. I will serve chopped boiled eggs as a garnish for those without egg issues. And I did take some other reviewer's suggestions of coating with the Dijon, salt and pepper before roasting. This salad has a rich deep flavor.

Vegan Baked Beans

Agree that the spices were too strong. Will add far less or just no cinnamon and nutmeg if I make this again. To fix, I added some ketchup and salt. Then they were great!

Baked Teriyaki Chicken

I made this twice. First a partial batch using chicken legs. I also used a coconut based faux soy sauce because we don't do soy or wheat. I only used 4 drumsticks and told daughter she could have two that night and two the following day. She wanted it all! It was a bit overcooked though and the hour wasn't even up. Tonight I doubled the amount of sauce. Used 4 chicken breasts and 10 drumsticks. Will put the extra in the freezer. I checked at 40 minutes and it was done. Daughter loves this stuff. LOVES!

Romaine Rice Tuna Salad

Personally I would have given this 4 stars but it didn't go over well with daughter and husband. I did make a few changes. I let the rice cool a little more and didn't mix in the greens. Instead I used a bed of them for the salad. Mixed in tomatoes for husband and myself (daughter hates tomatoes) and added an extra carrot, black olives and cucumbers. Green onions would be good in this as well.

Red Beans and Spaghetti

I agree that there are some things missing. I used to make this all the time using drained, canned kidney beans. The missing ingredients? Grated Parmesan cheese, a bit of Italian seasoning, a bit of olive oil or butter and plenty of freshly ground black pepper. Makes a good cheap meal.

Barley Bake

Wow! I just can't get enough of this stuff. It is so yummy! I served it with beef tips and gravy but it is also wonderful on its own. I'm eating the last of it now as a snack. I had only hulled barley, so I added a bit more broth and increased the cooking time by about 15 minutes. I also added one carrot and a stalk of celery, diced. And I had only canned mushrooms, but they worked just fine. I did find that I needed to cover it while it baked because too much liquid had evaporated. This is a super winter time dish and I can't wait to make it again!
