Pat's Cream of Potato Soup

I made this soup for Christmas Eve and it was a big hit! I made it exactly as written and it was delicious. I agree, the recipe was confusing regarding the flour, but you just need to make a simple roux with the bacon grease and it will turn out fine.

Greek Orzo Salad

I had high hopes for this salad, but it just wasn't for me. The pasta soaked up most of the dressing, so it was kind of dry and bland. Probably won't make again.

Grecian Pork Tenderloin

I am only giving this 3 stars because it was rather bland. The marinade was very tasty, but it didn't give the meat much flavor, even after marinading it for 5 hours--maybe overnight would've been better.

Bacon Quiche Tarts

YUM!!!!! These were very easy to make and so delicious! I used an extra egg and cheddar cheese instead of swiss. You could put almost any favorite ingredient in these and suit it to your own taste. Definitely a keeper recipe.

THIS WAS VERY GOOD, BUT IT LACKED "SOMETHING". THESE WERE A LITTLE ON THE BLAND SIDE, EVEN AFTER FOLLOWING SUGGESTIONS OF OTHER READERS. I'M WONDERING IF THEY'LL BE MORE FLAVORFUL AS LEFTOVERS, WHEN THE FLAVORS GET MORE PRONOUNCED.

Apple Dumplings I

This recipe was very good only with the modifications that everyone else suggested (i.e. 1/2 sugar 1/2 brown sugar, substituting oj for the water, adding more vanilla, doubling the sauce, baking x 10 min before adding sauce. It becomes a whole new recipe. Next time, I would use premade pie crust instead of biscuits and bake dumplings w/o sauce on them and cook sauce seperately to add on after dumplings are baked. With all of the mods this was very, very good. We made them for company and got a lot of compliments.

Oatmeal Peanut Butter Cookies

I thought these cookies were just "ok", nothing special. I used replaced the shortening with butter and added vanilla, other than that I left it the same. I did not think they were salty or particularly "peanut-y" tasting. I took another reviewer's advise and baked them for 10 minutes and they were underbaked. I won't be making these again :(

although I really liked this dish, I found it to be way too greasy--I liked the buttery flavor but it is too much of a good thing. if I make it again, I will cut down on the butter.

Restaurant-Style Zuppa Toscana

This soup has a great flavor-very savory. Next time I will only use half as much bacon and sausage; thought it was too greasy and a bit too salty. Also, I will use sweet, bulk Italian sausage, crumble and brown it in a separate pan and drain it very well before I add it to rest of soup--sliced sausage too big for soup.

Lemon Pudding Cake I

YUM! Made this for dinner dessert tonight--hubby LOVED it. Definately needs to be served warm. Only giving 4 stars because I thought it could be more lemony--not tart enough. Will make again and maybe add a tad more juice and zest.
