Cucumber Sandwiches

as is 4 stars...and i added some things which i think makes it 5 stars (and clears the platter every time i bring it to parties!). add the pre-mix dressing slowly to the cream cheese. i only used half. add freshly cut scallions (thinly sliced) and parsley. add 1 tablespoon mayo to thin the mixture. let sit overnight if possible. put bread in freezer for 30 min - 1 hr in order to be able to cut into shapes (i do circles via biscuit cutter). assemble, shake a layer of lemon pepper before placing top bread layer. then sprinkle with fresh parsley. so awesome! yummy and gorgeous.

4H Banana Bread

excellent! i HALVED this recipe cuz i didn't have enough bananas. my first banana bread ever! i did the half brown sugar / half white like other recommended, and also added 1 tsp each of cinnamon adn vanilla. like oe previous poster said, i did think it needed to be a tad sweeter, so i'll addd 2 extra tablespoons next time. i almost ate the whole thing by myslef over hte course of 3 days. shame, shame, lol...btw, i agree that it tastes better hte next day.

Asian Chicken Salad

OMG!!!! jlo, this was AMAZING!!! this may just be my favorite recipe thus far from this site?! based on waht i read from teh otehr reviews i made these 'changes'/additions and i could not stop eating this amazing dish: (1) i used 1/3 teh amount of the recommended veggie oil (2) i agree that the sesame oil is NOT optional (3) i used romaine sliced thinly + 1/2 bag of preshred coleslaw mix (?) (4) added cucumbers and red bell pepper (5) added garlic powder ot the marinade (6) doubled the marinade and used 1/3 to marinate the chicken 1.5 hours (7) used those superthin perdue chicken breast slices adn once cooked, sliced them superthinly. (8) added mandarin oranges (9) i don't like chow mein noodles, nor do i like the ramen noodle idea, so i wanted to buy those yummy crunchy noodles from the chinese takeout, but decided against it last minute cuz i got tired/lazy. the salad was AMAZING!!! i gobbled it up like a little kid. you HAVE to try this recipe. i chose it over the others cuz i already had 80% of this version's ingredients at home. YUMMY!

Classy Chicken

very very good. i agree with one poster who said it was on the salty side, however. i did let my sdtomotoes soak for a long time. i guess i'll have to do it even longer. i took people's advice and added an entire containter of mushrooms that i sliced. DIVINE!!! the sauce is amazing. like one person said, i didn't want to add the sour cream becuase i liked the sauce as is. but becuase of the saltiness (and no, i didn't add ANY salt to the dish, even the chicken), i added 2 tablesppons of sour cream. beautiful!! it was quite yummy. i can't even believe i made it, lol!!! thanks os much for the recipe. like i said, i took off a star for the salt factor, but otehrwise, scrumptious! :)

Italian Spaghetti Sauce with Meatballs

i didn't think the sauce was very exciting...it was very good, but nothing to write home about. i took people's advice and used crushed tomotoes instead of whole. it was quite good. a tad too salty, so i would cut the salt out altogether. THE MEATBALLS ON THE OTHERHAND were excellent! so moist, delicious, and flavorful!!! it's the first time i've ever made meatballs and i lvoed them! i'm still so surprised we cna just dunk raw meat into the sauce and have them come out so yummy?! thanks so much -- htis recipe is a keeper!

Jamaican Beef Patties

excellent!! granted i was looking for hte ideal meat recipe (i used phyllo sheets instead of making the dough myself) and it came out AMAZING!!!! i did add some of my own stuff into the meat mixture as well: scallions, hot pepper, minced garlic, garlic powder, and paprika - it was out of this world!! i also added less bread crumbs cuz i don't like the texture when you add as much as was suggested. this will be my staple 'appetizer' to bring at potlucks and such. thank you so much!!

Shrimp Fried Rice II

absolutely delicious!!! i can't believe how yummy this was. i made the rice the night before (uncle ben's) - and used chicken stock instead of water to make it. the rice was nice and separated and flavored after it was done. the next evening, i cut up all my ingredients. in addition to what's originally listed in the recipe, i added about 1/2 cup sliced portabello mushrooms, 1/4 cup diced (chopped?) celery, and 1/6 cup finely diced red pepper. i added garlic, pepper, and onion powder to my shrimp before adding them to the pan. i'm "afraid" of eggs in the evening (lol...eggs are for breakfast!), so i scrambled them in a separate pan, and added it at the end lil' by lil'. it was fabulous! THIS WAS AN AMAZING DISH!! i'll be making it very often. yummy! to those that feel their rice got mushy, my guess is that you were moving too slowly. this dish is done in mere minutes. either your heat was too low on your "wok" (i used a big ol' frying pan) or you moved too slowly mixing everything in. good luck - this dish is delish! :)

Baked Salmon II

WOWZA!!! delicious. i've been bypassing this recipe for a long time cuz it looked so 'blah' to me. i was wrong!! maybe using fresh basil AND fresh parsley did the trick? regardless, i haved the olive oil as suggested by most, and doubled the garlic. i also added a little bit more lemon juice. the salmon proved sinful. it was absolutely delicious. definite keeper!!! yummy! thanks os much.

Easy Chicken Rice Casserole

i finally had a chance to try this! it seemed like a great dish to make when you have lots of to do but still want a homecooked meal on the table. i followed EVERYONE's advice and this dish therefore came out pretty darn good! i used cream of chicken with herb and added extra water (i don't think i'd like cream of mushroom). the only big thing i changed was to add a little less liquid and little more rice since i DON'T like 'creamy' rice (blech!) and the rice came out great. also, i HEAVILY seasoned the chicken breasts, liberally sprinkled them wiht flour, and pan friend both sides to a nice brown color and THEN added them to the dish to cook through along with the rice. it made the chicken look MUCH more appetizing, in my opinion. that's the thing with this dish: smells great while cooking, tastes delicious, but the presentation is UGLY. i so wish i could make this for guests, but i just don't think it looks like a yummy dish. too bad. i give it 3.5 stars, husband gave it 5 stars, for an average of 4 stars. definitely give it a try!

Chicken Salad with Bacon, Lettuce, and Tomato

definitely delicious! this is hte first time i've ever made chicken salad, and chose this one cuz (1) for oncce, i had almost all the ingredients (2)i love regular BLTs. i made some lil' changes: (1) i used canned chicken (2) miracle whip instead of mayo (3) used 'italian seasoning' instead of parsley (4) added extra celery (5) used turkey bacon instead of regular bacon. i had it with shreadded lettuce on a subroll. it was delicious. i will definitely be making this on a regular basis. this is SO much better than stupid tuna salad and smells a million times better. thanks so much for this GREAT recipe!

Angel Chicken Pasta

i'm so sad to have become a dissenter among all these rave reviews! i must say that my husband liked it much much more than i did (he'd give it 5 stars)...but i'd have to agree wiht one reviewer who said it was too rich and with anohter who said the color isn't very appetizing. husband kept saying it tasted like shrimp neuburg and i have no idea what that is (i wasn't brought up on american food), so i'll look it up after this post. regardless, it is a good dish, and i could see myself makign it for guests cuz i think it's an 'all american' dish, just not to my liking. we had it with penne pasta and i think it went well with it. oh! i forgot to say that this dish was SUPERSALTY!!! i guess i'll use unsalted butter next time i make it. i must also admit that the wine in the dish smelled glorious!

Pancakes I

ridiculously delicious! i love pancakes and i'm very very picky. the only store-bought mix i thought was incredible was the aunt jemima FROZEN pancake batter. everything lese (i've tried ALL kinds of store bought batters and powders) are just ok. this is the first time i've ever made my own and this one was GREAT! it was perfect! i followed the tip below about (1) beating the egg whites separately and adding it last (2) not overbeating the batter (3) adding 1 tsp vanilla and (4) 1.5 tablespoons of sugar. i don't know if all that made all the difference, but these pancakes were just perfect! yummy! thanks so much!

Grandma's Famous Salmon Cakes

very very good! i'm munching on it right now! i'm having it with salad with balsamic vinegar dressing adn it's delicious! mind you, i have never eaten a salmon cake before, so this is my first. things i did differently? i didn't have a medium onino, so added green onion instead. also, i added 4 tablespoons of seasoned bread crumbs, one of which i sprinkled on top of the cakes to get a nice color once cooked. also, i added a good amount of 'old bay' seasoning (love that stuff). lastly, i used olive oil insread of veggie oil...tastes good and i'll def be making these again! thanks so much!

Grilled Salmon I

this was RIDICULOUS!!!! why go out for salmon when you can make this?! this was delicious. i couldn't get enough!! i even ended up making this as 'salmon bites' for an appetizer 'sex adn the city' party last weekend and they literally flew off the serving platter! this is an increidble moist and delicious work of art...i still can't believe i made it! for dinner, i served it with homemade mashed potatoes and green beans...husband wolfed it down and in between bites i believe i deciphered, "man, this is really really good!"...chaulk up anohter win for this wife! lol...

Baked Salmon Fillets Dijon

very very good and so incredibly easy to make! goodness! i ended up using what i had in teh fridge: mustard with honey in it. i figured it wouldn't kill the dish, and i was right! i give it four stars rather than five cuz i wihs it was more moist...maybe i didn't add enough butter? regardless, i will be making this again (can't wait for the leftovers tomorrow!)

Lite Carrot Cake

this is the first cake in my life that i ever made from scratch. i was so pround of myself when i was done! the cake was so yummy!!! well, i shoud say cupcakes. the recipe makes 24 cupcaeks. i give the recipe four stars instead of five becuase (1) i like denser carrot cakes (2) i like sweeter carrot cakes. so when i make this again (and i will definitely make it again), i'll one less egg white and add more brown sugar? i don't know how much that will change the recipe. if you happen to know or have suggestions, pls let me know, oh! and don't forget how INCREDIBLY MOIST this cake was!!! delicious!! yummy.

Easy Salmon

to say that this is easy is an UNDERSTATEMENT! to say that this is succulent and moist is another UNDERSTATEMENT. this is absolutely delicious. the mushrooms are splendid. i will definitely be doing this one again...maybe next time i'll add even more mushrooms. i found that the ones that literally stayed on top of the salmon didn't get as much flavoring and didn't soften up as much as those that fell onto the baking dish. thanks so much for sharing!
