Salsa Cheese Boule Dip

Reviewed: Jan. 25, 2004
I eliminated the bread bowl as it was for a Mexican themed buffet, so served it with the lime chips as someone else had mentioned. The only thing I would change would be for a little color, I would add some green onions for some color using the tops. I also used the hot Pace Picante sauce as most the people we know like it hot. It WAS all gone when we left. A definite keeper! Thanks, Julie!

Breakfast Treat

Reviewed: Jan. 25, 2004
I really did a lot of changes on this one but it was delicious. There is only hubby and I and there was still more than half left (only because I'm trying to lose weight!) I made it in an 8 x 8 glass dish, sprayed with Pam. I used 9 cocktail rounds for the bread, which fit pefectly. I doubled the cheese to 2 c. I layered that on top, then half a green pepper chopped, and half an onion, chopped, then sprinkled Bacos on top of that. I eliminated the butter entirely. I mixed the 4 eggs with only 1 c. of milk, adding 1/4 t. salt, 1/4 t. pepper and 1 t. dry mustard. I still baked it for an hour but maybe this was my mistake. The recipe said to cover and refrig overnight. I did not do this but it never said to uncover it to bake, so I left the foil on which made it a little soupy. The taste was all there though. I will try this again definitely but this time leaving it uncovered and see how it goes. With the changes I made, a definite keeper. Thanks Shari for putting me in the direction of getting this great casserole together!

Corn Chowder II

Reviewed: May 23, 2004
I am giving this 5 stars because of the great taste. I used a hot fresh red pepper instead of a red bell as the grocery store didn't have one. We used this as a DIP though with corn chips because it was so thick! It made a great dip though and will use it as a change from nacho cheese dip, etc. Couldn't stop eating it!

Irresistible Irish Soda Bread

Reviewed: Jun. 11, 2004
I don't like Irish Soda Bread, I just "don't get it" although I keep trying it from time to time to see if I "do". THIS ONE though is totally different, not boring as the others I've tried have been. My husband likes all bread toasted the best and it toasts up great, too.

Chinese Roast Pork

Reviewed: May 2, 2005
This was wonderful! Our favorite meat is pork, so I have quite a few recipes (several from this great recipe site). The roast was tender and the marinade which then became the sauce was out of this world! Although it didn't affect the roast any, I would spray with Pam next time for easier clean-up. I used a glass casserole dish and the marinade would roll down the roast and burn at the bottom, don't know how to prevent that but it won't stop me from making this different pork roast again.

Veal Stew

Reviewed: May 2, 2005
We had added cubed potatoes and carrots at the end to make a full meal out of it. It was a little bland, so my husband added some sea salt, pepper, paprika, and Mrs. Dash Extra Spicy Mix. FANTASTIC. Gave it a great zing. Will definitely make it this way again. Thanks!

Beef Barley Vegetable Soup

Reviewed: Aug. 12, 2005
Nuked the bouillion cubes and water then put it in with the meat and put it in the crockpot on high for about 7 hours. Cooled and skimmed off the fat. Next day, after sautee'ing veggies (used petite beans for the mixed vegetables) put in a Dutch Oven, then added diced tomatoes, as that is what I had on hand along with rest of ingredients. Great flavor! Think I will add 4 c. more water/bouillion next time as it was really thick so I can add some corn and more barley, maybe on that one. Very tasty! Thanks for a keeper! (Also think I'll cut meat as for stew as that is what it turns out more to be like, a stew). It IS just the best combo of flavors.

Fresh Pear Pie

Reviewed: Jan. 10, 2006
Pears are my favorite fruit but hubby resists getting them because they bruise so easily and get overripe so quickly. This recipe? Problem solved! He loved it as did everyone else.

No Fail Pie Crust III

Reviewed: Jan. 10, 2006
Made this once when I was out of shortening and I'll probably never go back either (unless I'm out of butter, ha-ha). Hubby is a real "crust freak". Last time I made this crust, he could care less what the filling was and just wanted to eat the crust. Thanks for a terrific recipe!

Chicken Soup III

Reviewed: Jan. 10, 2006
Used thighs only (I don't have the patience for picking out all of the bones otherwise) and chicken soup base as we like a strong taste and added more of the veggies, just personal preferences. Went with the noodles. Really, really tasty soup. This is the only one I'll use from now on. Hubby was un-sick in no time. Great recipe, thanks!

Awesome and Easy Creamy Corn Casserole

I have tried many Creamed Corn Casseroles over the years so my family has a lot of "experience". Hands down, they all said this was THE best. Works for me! Thanks for sharing this keeper.

Mock Apple Pie

Reviewed: Jan. 23, 2006
My husband's Mom used to make this but hers didn't have the topping he said. This would have been great even without it, but that crunch and flavor on top really puts it OVER the top! He loved it even more than what "Mom used to make". Thanks for sharing!

Apple Crisp III

Reviewed: Apr. 3, 2006
This was SOoooooooo good. I read the reviews, took some advice and think this is about as easy as you can make it: I didn't even peel the (Granny) apples. I used a corer/slicer which cuts them into 10 slices. I added no water. I used 1 cup of Golden (light) brown sugar and mixed the cinnamon right in with the rest of the topping. I had to use a glass pie plate as my 8x8 was at my daughter's. Baked 45 minutes. This was sooooo great and not too sweet. In fact, it made the eggnog ice cream I put with it seem very sweet (and we don't like very sweet). This is the very simplest dessert ever, especially with the shortcuts I made. Came out perfectly and an absolute keeper. Thanks for a fantastic recipe!
