Green Chili Stew

This had just the BEST flavor. Had to change the recipe a bit for what we had on hand. We had whole pig on the spit to use up. Guessing about the amount used but thinking more than 2#. Used 8 Anaheim peppers, roasted, peeled, coarsley cut. Used 2 t. minced garlic and 1 t. salt, 1/2 t. pepper, 1 1/2 t. cumin, 28oz. (yellow) tomatoes and 4 c. water w/ 4 T. chicken soup base (extra water because wanted extra potatoes). Chunked 4 medium potatoes then thickened w/ 1/4 c. flour and water at the end. We are true pork lovers so I think I'll always make it with pork but when the "real pig" runs out, maybe I'll add some liquid smoke to store-bought. I live where there is lots of Green Chili Stew around and definitely eaten my share. This is absolutely the best. The flavor just rules! Thank you!

Corn and Crab Bisque

This was SOooooooo good! What a great way to use up leftover crab legs. After reading the reviews, in place of the 1/2 and 1/2 and the milk, I used heavy cream. Although the consistency turned out perfectly, might not do it again as hub said it was very rich, that it was great but "you can't eat a lot of it". Hhhmmm, maybe I'll keep it as is, ha-ha. I CAN eat a lot of it --his portion, too :)

Oven Fried Catfish

Garlic Potatoes Gratin

We love cheese, especially Gouda, so I upped it to 2 c. I don't usually have heavy cream on hand so I used a can of Evaporated Milk instead. This was sooo good and it looked so nice, too. Thanks!

Yam Casserole

This was just the best! It's so good, so addicting! I used 2# fresh yams, changed the white sugar to 1/4 c. brown sugar and used Total Brown Sugar and Oats, slightly crushed. It was fantastic. Made it for the Holidays once and EVERYONE raved, now it's a tradtional dish. Thanks!

Eggnog Pancakes

Shortbread Crust

I love this recipe (we love shortbread!) and can see myself using it for many pies that had the traditional crust. Seems like the right "fit" with fruit pies. I made a strawberry pie from this site and it was out of this world with this crust! Thanks!

Chicken Vicious

I can't find enough excuses to make snow peas so I did sub them for the peas and I did use brown sugar instead of white. I loved this recipe and it's zingy flavor! Of course, I LOVE vinegar (and even judge hot wings with how much is in them --the more, the better!) But, alas, hubby doesn't share in this longing so I guess I'll tone it down for him and eat with a bottle of vinegar in front of me. Really flavorful, thanks for sharing!

Amish Macaroni Salad

Used a 1# box of macaroni and that was way too much for two people...so I ate all that was left (lots!). Really crunchy and good. Followed exactly right down to the Miracle Whip. We were adding more salt, though (our preference) at the table. Next time might add "something" spice-wise but we aren't sure what yet. Great recipe, love all of that crunch! Thanks!
