Simply Parmesan Chicken

We just LOVED this! This was soooooo good and soooooo easy. I used boneless thighs as that is what we like. As others stated, WAY too much of the breadcrumb mixture. This just melted in your mouth. Thanks for sharing! Totally simple yet nice enough for company.

Italian Breaded Pork Chops

I never breaded my pork chops before but since husband came along, he loves them that way so this was my attempt. These came out just as advertised but I should have read more of the reviews and went with 1 less egg and half of the bread crumbs (although it did make it quick and easy to bread with all of those crumbs!) I did transfer to a glass casserole for baking and easy table presentation. Might add ground rosemary next time. The 2 T. olive oil probably could have been 3-4 T. They did come out looking picture perfect though and hub must've complimented them more than anything else I've made (and I cook a lot). Thanks for the really easy recipe to get all that praise for!

Mexican Wedding Cakes II

I have made these cookies over the years under various different names. These received the most compliments, though. Out with the other recipes. So easy, too! The other recipes were telling me to roll once in powdered sugar while still warm, then again when cool. It never adhered to the cookie right. These work and much LESS work! Thank you.

Ukrainian Red Borscht Soup

This was absolutely wonderful! I never bought a beet in my life and had no expectations of what Borscht tasted like. I used the whole cabbage and didn't peel the potatoes. It was like the best vegetable soup ever (only with pork). We just loved this and couldn't get enough of it --hot or cold! Thank you for a "forever" recipe!

Pea 'n' Cheese Salad

Great crunchy salad! I already had shredded Cheddar, so I used that instead of cubed. I sliced the radishes a bit thicker. I remember in other salads with radishes, if I sliced them too thin they became transparent and didn't keep their crunch. Liked the idea of the relish in it. I love salads like this that are "heartier" and this sure rises to the top. Thank you!

Kentucky Biscuits

These were perfect. I did add 1/4 t. salt rather than a dash but otherwise followed the ingredients exactly. Barely kneaded the dough, just pressed together and turned in the bowl a few times to make sure everything was incorporated, minimal handling. Rolled out on the counter approximately 12x12" because I wanted more of them and cut out in about 3" circles. When done, they were only about 1/2" high doing it this way (duh). I will try the 6x6" as stated next time for a "loftier" biscuit. Great taste. Thanks for a true classic!

Date Nut Loaf Cake

This was so easy and the flavor was just right. I didn't get to making the topping and it wasn't even missed (although I do want to try it). Just a dusting of powdered sugar worked beautifully. Thanks for a wonderful and quick dessert!

Pleasant Pork Chops

My pork chops did not turn out as tender as usual so I will have to adjust cooking times or something. Minor stuff --the FLAVOR in this recipe is to die for! I used 1 t. chicken soup base nuked with the 3/4 c. water for the chicken broth. Hub thought that I should either dice or chunk the onions next time for a smoother texture. I agree with dicing them. This sauce was so good that it wasn't nearly enough! Will make much more (4 times?) next time for putting over noodles. Can't say enough about the flavor of this recipe. I even had cravings for it and had to get up in the middle of the night for it plus breakfast. Thanks for this keeper! P.S. I did not cook down to reduce the sauce, either (no surprise there!)

Sausage Egg Muffins

I put shredded Monterey Jack on top halfway through. Used one chipotle chili (canned), diced, as that's all I had on hand and sage sausage for the same reason. These look so nice --they look like they're difficult to make but are so simple. I'll scale it down for just the Hub and I but it'd be nice to serve for holiday brunches, etc. Really different. Thanks!

Raw Vegetable Salad

I doubled this right off the bat, using a whole head of cauliflower (because I hate having "half" of anything left, seems like it always gets wasted) and upped the rest of the salad ingredients accordingly then doubled the dressing. (Hub really liked the dressing and asked what was in it). I never make salads with both veggies and fruit but this just sounded "right" --and it was! Will use dry roasted peanuts next time, personal taste. Very tasty! Thank you.

Chicken Monterey

This is what I would call a dish for company (but I'm not waiting for them to come to keep making this!) I didn't bother to pound the chicken, basically, because I didn't want the extra cleanup. It was cooked perfectly all the way through. I cut each huge mushroom in 16 wedges just because it gives it more texture and looks special. Fantastic recipe! Thanks for sharing.

Spaghetti with Garlic and Basil

This had lots of flavor! Nice and garlicy. We wanted our carb fix last night but with butter and garlic and this was it. I accidentally poured in 1/2 c. olive oil but still kept to the 1/4 c. butter. Without sauteing, I added 1/2 an onion that I needed to use up and 1 t. each of dried basil, marjoram and red pepper flakes, 1/2 t. each of salt and pepper. We love cheese so doubled it to 1 c. grating a good quality Parmesan and also mixing it in with the hot noodles. Nice change from tomato or creamy sauces. Will definitely make again. Thank you!

Creamy Au Gratin Potatoes

I have lots of potato/cheese recipes that are great but this is the only one that I would call "Au Gratin Potatoes". It has the right flavor. I used Gold Rush brand sharp cheddar. It has a stronger taste than others, I think (which we like). I mixed 2 T. parsley flakes in the sauce for color (might try chives, also). Been looking for a long time for an au gratin recipe for potatoes. Thanks!

Truck-Stop Buttermilk Pancakes

These did not "rise" like the pancakes I am used to but hub liked them because of that. Says he doesn't like them cake-y and these weren't. I made the 4.8 version. So 5 stars as I found pancakes he really liked. Thanks!

Grandma Johnson's Scones

Did everything as advertised. Rolled out so nicely. Just the right sweetness. They were perfect. Fantastic texture and flavor. Melt-in-your-mouth (a lot!). Missed the part about the wedges, though, so used a large cup as a "biscuit cutter" for the 12 and then went back and did all of the "scraps" it was so good. Will be back to this one often. Thanks!

Green Chili Stew

This had just the BEST flavor. Had to change the recipe a bit for what we had on hand. We had whole pig on the spit to use up. Guessing about the amount used but thinking more than 2#. Used 8 Anaheim peppers, roasted, peeled, coarsley cut. Used 2 t. minced garlic and 1 t. salt, 1/2 t. pepper, 1 1/2 t. cumin, 28oz. (yellow) tomatoes and 4 c. water w/ 4 T. chicken soup base (extra water because wanted extra potatoes). Chunked 4 medium potatoes then thickened w/ 1/4 c. flour and water at the end. We are true pork lovers so I think I'll always make it with pork but when the "real pig" runs out, maybe I'll add some liquid smoke to store-bought. I live where there is lots of Green Chili Stew around and definitely eaten my share. This is absolutely the best. The flavor just rules! Thank you!

Corn and Crab Bisque

This was SOooooooo good! What a great way to use up leftover crab legs. After reading the reviews, in place of the 1/2 and 1/2 and the milk, I used heavy cream. Although the consistency turned out perfectly, might not do it again as hub said it was very rich, that it was great but "you can't eat a lot of it". Hhhmmm, maybe I'll keep it as is, ha-ha. I CAN eat a lot of it --his portion, too :)

Garlic Potatoes Gratin

We love cheese, especially Gouda, so I upped it to 2 c. I don't usually have heavy cream on hand so I used a can of Evaporated Milk instead. This was sooo good and it looked so nice, too. Thanks!
