Mini Pumpkin Butterscotch Muffins

Made a few changes to try to make it healthier - used honey instead of white sugar, oil instead of butter, doubled the pumpkin, added 1/2 cup of ground walnuts & 1/2 cup of wheat germ, and used 3-4 tsp pumpkin pie spice & extra cinnamon instead of the separate spices. Kids LOVE them!

Chicken Satay with Homemade Peanut Sauce

This was awesome! I did not use the red chile peppers because of my small children (added red pepper flakes) & used natural chunky peanut butter as well. I served it over brown rice with broccoli sautéed in a few tsp of sesame oil. I will definitely make this again - very easy & flavorful!

Playgroup Granola Bars

Kids loved them! I didn't have wheat germ so I used flax seed & wheat flour instead of white flour. I doctored them up & added ground walnuts, coconut, a big scoop of almond butter & a few chocolate chips. These satisfy a sweet tooth & add are healthy at the same time! I only baked them for about 24 minutes though. Awesome - this is now a staple!

No-Bake Peanutty Graham Treats

AMAZING! So easy but decadent! I added chocolate chips & more mini marshmallows as I stirred the PB mixture in the cereal, then topped with additional mini mallows for decoration. The kids got a kick out of the marshmallows & everyone loved it! Will definitely make this again!

Gingerbread Frosting for Cookies

This frosting is brown, not even close to white or off white. It is heavy on the spices and very runny. I triple checked to make sure I had all of the measurements correct & I made it exactly as listed. I will take the other readers suggestions & add more powdered sugar & butter to try to save it.

Mediterranean Quinoa Salad

Fantastic! So light & fresh. I only used 1/4 red onion & cut the olive oil back a little. Will definitely use this as a go-to meal esp for company because it's different.
