Oven Roasted Baked Potatoes

Not sure why the recipe called for only 8 potatoes; fingerlings aren't large so use your best guesstimate. I used about 10-14 and kept all the other ingredient measurements as written. I sliced my fingerlings on a mandolin slicer to make them more even. Instead of using fresh garlic, I sprinkled in garlic powder. After pouring everything into a baking dish I topped with a shredded Italian cheese blend and bread crumbs. Cooked at the indicated temp for 45 min and the potatoes were cooked but not mushy. Very good recipe. Will make again.

Healthier Eggplant Parmesan II

The recipe turned out delicious. However it was a lot of work prepping and the final 'presentation' with the baked eggplant looked dry. It wasn't dry, just looked as if it might be. It was for my family so they didn't care. Even my 5 year old ate it! However if I made it for guests I would probably put extra sauce over the top layer of baked eggplant to cover it before I put on the cheese.

Balsamic Roasted Pork Loin

Great recipe and way too easy. There is no vinegar smell as another reviewer said; balsamic vinegar is different than regular vinegar so make sure you purchase the right item (they can't be substituted for each other). I used southwestern seasoning I had handy instead of purchasing steak seasoning and it was perfect. I put the ingredients in a gallon sized zip locked bag and shook them up really well as the oil will want to separate from the other ingredients I then placed the pork loin in the bag, put it in the dish I was going to cook in and put it in the fridge. I rotated the loin every few hours until I went to bed. The next day I emptied everything into the dish and baked. I didn't baste the meat at all once it was in the oven and it came out great. Even my picky 7 yr old nephew had seconds. I will definitely be using this recipe again and again. It's a winner.

Day Before Mashed Potatoes

Easy dish! I made and put immediately in the removable part of the crock pot that was sprayed with cooking spray. The next day I took it out of the fridge and put it in the other part of the crock pot and turned it on low for 3 hrs. It worked perfect and kept my oven free for other items. I wish I owned a ricer to mash the potatoes (I think they would have been creamier) and I did add a little shredded cheese to the ingredients. Other than that, I made exactly as described. Everyone loved them!
