Italian Sausage, Peppers, and Onions

Reviewed: Jul. 27, 2013
I didn't make too many changes to this recipe. After I browned the sweet Italian sausages and removed them, I had a lot of sausage drippings in the pan. I just tossed the butter in with the drippings and continued with the rest of the recipe. I had doubled the ingredients because I have a large family. The only real modification I made was that I used about 1 1/2 cups of white cooking wine (3/4 cup if not doubling the recipe). It was a hit! Will be making this one again.

Tomato-Curry Lentil Stew

I make this all the time for me and my 5 children. We all love it! I scale the recipe for 8 servings, because I love having leftovers for the next day.

Krissy's Best Ever Corn Muffins

Reviewed: May 22, 2006
I could have sworn I had some corn on hand, but I didn't. I went ahead and made it anyway...minus the corn. Very good!

Potato Chips

Reviewed: Feb. 16, 2006
I am giving this 5 stars because I know it would be awesome if all the slices could be cut evenly and thin. I had a few that I was able to get real thin and they were great. The thicker ones were edible, but not great. I may have to go buy a slicing board! I did have to play with the time, but again, it may have been because of the varying thickness. I did have the same issue with the chips sticking to the plate as others, but I was able to carefully pry them from the plate using the tip of a sharp knife with minimal breakage of the chip.

Eggplant and Zucchini Casserole

Reviewed: Feb. 16, 2006
I couldn't find any zucchini at my grocery store, so I used a yellow and green squash instead. Definitely time consuming with all the chopping required, if you are doing it all by hand. I used a Coly & Montery cheese mix. Everyone loved it!

Shrimp Scampi Bake

Very good and easy to make. Next time I will add more lemon. It was good, but didn't quite have enough zing for my taste.

Restaurant-Style Buffalo Chicken Wings

Reviewed: Feb. 16, 2006
Mmmmm...delicious! Very easy to make too. I was worried it would be too spicy (for my kids) but it was perfect! I cut the wing tips off and cut the wings in half to make them look more like the traditional buffalo wings and served with ranch dressing and celery sticks. My 9 yr old is already begging me to make them again!

Fried Mozzarella Cheese Sticks

Reviewed: Feb. 11, 2006
These were easy and tasted great! I mistakingly combined the bread crumbs with the flour mixture, but it still turned out perfectly fine and ended up being a step saver. I also triple dipped the cheese (egg, breading, egg, breading, egg, breading) and got a nice thick coat and no melted cheese running out. My 3 boys gobbled them up in a matter of seconds!

Butternut Squash Casserole

Reviewed: Feb. 8, 2006
Way too sweet! WOuld probably pass as a very good dessert. Next time, I will do as others suggested and cut the sugars. In fact, I would skip the brown sugar/Nilla waffer topping, and just sprinkle with some nutmeg or cinnimon.

Almond-Crusted Halibut Crystal Symphony

Fantastic! I went to 3 different places looking for halibut, but no one had any on hand, so I ended up substituting with sea bass. I also substituted the White Wine with some White Chardonny. I will be making this one again!

Maryland Crab Cakes II

Reviewed: Jan. 25, 2006
I am from Maryland, so we eat alot of crabcakes. I have tried many crabcake recipes, and this one is probably the best. I followed the recipe exactly, but I wanted to add Old Bay Seasoning, which I forgot *gasp*. Don't over mix the crab meat. It should stay lumpy!

Very good! The only thing I didn't like was it was a tad too liquidy. I think next time I will cut down on the amount of tomato juice. But other than that, it was perfect!

Elaine's Sweet and Tangy Loose Beef BBQ

very good, but I thought it needed something to give it some more kick...maybe instead of ketchup I will use BBQ sauce next time. I am giving this 5 stars because my 3 sons really liked it and even had seconds.
