About this Cook
I am originally from California but moved to Maui as a very young age along with my large family. My husband and I will be celebtrating our 35th wedding anniversary on July 4th. We own a beautiful home in upcountry Maui along with our dog Pebbles and our two cats, Charolotte and Zoey. I started teaching my husband Rusty to cook about 5 years ago and he has become quite an accomplished chef. His expertise mainly are pickling vegetables and smoking meats and fish.
My favorite things to cook
I love Italian food and making bread of all kinds using my bread machine. (Primarily for the kneading and rising) I just recently was diagnosed with high blood pressure and boarding line diabetic. I since started the "Dash Diet" which is absolutely amazing. I have lowered my blood pressure from 175/115 to 119/80 in just two weeks. The food is fantastic and I have found so many wonderful recipes over the internet including many from your website. What an adventure!

Chocolate-Zucchini Cupcakes
Very good. Mine came out moist with a sponge cake texture. I did follow other reviewers by substituting apple sauce for most of the oil. I also used coconut oil in place of vegetable oil. I only had cocoa powder on hand so I did add a couple of tablespoons of vegetable oil so that it would not be too dry. I did add semi sweet chocolate chips and macadamia nuts. So glad I did. I'my not frosting them since I want to keep them on the healthier side and they really don't need the extra flavor anyway. Mahalo for the great recipe!!

Homemade Sloppy Joes
My husband is on a low cholesterol diet so made with ground turkey. I also added a little jalapeƱo and a dash of A1 sauce. Made into sloppy pies using Grands bisquits. Super yummy!!! Mahalo for the recipe!!

Pumpkin, Kale, and Black Bean Stew
Oh gosh! Everyone keeps giving me what is called a kabocha on Maui. Wanted to use one and came across this recipe. FANTASTIC!!!! Had everything on hand and it came out FABULOUS! I added a little cumin and coriander. This is definitely a keeper, otherwise didn't change a thing. Big MAHALO for the recipe! !????
