Red Skinned Potato Salad

I made this for a picnic and everyone raved over it. I did use one cup of mayonnaise and one cup of Miracle Whip because I like a little more zip. This recipe is a keeper.

Sassy Sausage and Black Bean Soup

This is good but I didn't think it had enough black beans, so I also added another can. I also found it a little salty so next time I will soak the sausage in some water for a few minutes to try and reduce some of the salt. I will make it again.

Pork Chops and Sauerkraut

Great recipe! Turned out fabulous. My husband doesn't like the taste of vinegar so the apple juice really did the trick to make this a nice flavor. I did put small chunks of a Granny Smith apple into the mixture. Easy and fabulous.

Beth's Spicy Oatmeal Raisin Cookies

I make awesome cookies, but I never had a good oatmeal raisin recipe. This one is it! I used all butter flavored Crisco instead of using any butter (butter tends to burn in cookies). I also soaked my raisins in warm water for 10 minutes before I added them to the dough. Use the convection feature on your oven (If you have one). Never grease or spray the pan (causes bottoms to burn). Wipe the tray off between batches. These cookies were soft and chewy with fabulous flavor!

Eggplant Parmesan II

I have never made eggplant parmesan and my friends reported how difficult it was to make. This recipe is easy and delicious. My husband loved it. It is a bit time consuming. I "sweated" the eggplant between papertowels like another review had suggested. I used 3 baby eggplants and had more than I needed. It turned out wonderful.

Broiled Tilapia Parmesan

My husband works in a seafood restaurant. It is just the two of us at home, so we eat out alot. This recipe is fabulous and is 5 star restaurant quality. It's very easy too! This recipe keeps us home for dinner!

Four Cheese Macaroni

This recipe was good, but, I too, was disappointed that it was not as creamy and gooey as I expected. It had a good flavor, but was a little dry. I will add more cheese next time.

Cranberry Nut Bread I

Excellent recipe! My husband and I love this bread. I used my food processor to chop the cranberries and nuts. I also used a tablespoon of grated orange peel, fresh off the orange instead of the prepared orange zest. It turned out great. We ate half of it before it cooled! It is very pretty too. I will be making in and giving it out as gifts for Christmas. Thanks!

Oatmeal Banana Nut Bread

Hello! I was looking for a good banana nut bread recipe to make to give as Christmas gifts along with a Yankee Banana Nut Bread candle. This recipe is fantastic. The bread is wonderful and is very attractive to wrap in cellophane and give in a gift bag. I tweeked the recipe a little, at the suggestion of some other readers. I used 1 1/2 cup of RIPE bananas. I also added 1/2 tsp cinnamon to the batter. As a finishing touch, I mixed a tsp of cinnamon, 1/2 tsp of sugar and about 1/4 cup of oatmeal flakes and then sprinkled them on the top. It is delicious and moist!
