Cornbread Casserole
This is great, as is-- I've made it several times now, and made the mistake of trying to mess with the amount of sour cream once. That did not turn out well. Really, keep it to 1 oz! This last time, I used an 11 oz can of whole kernel corn instead of 15 oz and it was great-- just drain the whole kernel corn. This is AMAZING as a breakfast dish in leftover form. Just put a pat of butter on top and a dollop of honey, then microwave for a minute. Truly awesome.

Zucchini and Eggs
I do something very much like this in the oven in a small casserole dish brushed with olive oil- cut up a large zucchini, add two to three eggs, stir it all together with red pepper flakes, garlic, salt, oregano, then top with cheese. Good topped with pimento cheese instead of parmesan for a "Southern" flair as well.

Meatball Nirvana
So good and so easy, using everyday ingredients that I always have. My husband, who is not a fan of meatballs (for some odd reason- weirdo) loved these and plans to sub them for sausage in the yummy red sauce he makes. Subs- I used an egg instead of milk, siracha instead of Frank's, and left out the breadcrumbs because I eat low carb.
