Mozzarella Wedges

Quick, delicious, and much fancier than just the rolls alone! I omitted the butter, and sprinkled an Italian herb mix, and then rolled them according to the crescent instructions so they were more like cheese stuffed rolls. I also sprinkled more cheese on top. They turned out so good my company were reaching for seconds of the appetizer faster than the entree (gnocchi).

Ricotta Gnocchi

Very sophisticated looking but so easy! The only thing I changed was to have a bowl of Italian sausage on the side in case anybody wanted to sprinkle some on top (all but my vegetarian friend did). The taste was very good, better than anything I've had in 'authentic' Italian places, but with the cheeses being kind of pricey, not much cheaper than eating out. The dish only fed three people and the ingredients cost about $25 (and I already had the staples, so that's oly the meat and cheese). I served with Mozzarella Wedges, and dinner was a hit. If I make again will cut the Gnocchi smaller, my pieces were like an inch long and half an inch wide and deep so a pretty big mouthful. Keep in mind the sauce is not the paste you're probably used to if you use the canned spaghetti sauce, at least mine turned out pretty thin.

Country Apple Dumplings

Made a 1/2 batch since it was just for the boyfriend and I, and baked in the giant sized muffin pan with each dumpling individual since some of the pictures looked like they got stuck together. Otherwise did everything else the same. Both changes were excellent, since baked individually they had a nice round shape (the featured photo must have been done that way). Served warm (half hour cool time) with whipped cream. Tastes like the baby of french toast, a cinnamon roll, and apple pie. So yummy!
