Used this recipe for my first ever Red Velvet cake, DELICIOUS!! I made a practice batch last night in preparation for making them for a coworker's birthday, they were a huge hit. I did not frost them all because the frostiing has to be refrigerated, and my husband and brother in law were eating them plain, still great. They are moist and chocolatey and the perfect red color. My only thought is substituting the food color with Wilton no taste red or the Americolor version if I could figure out the conversion. Once baked the aftertaste doesn't seem to be as much of a problem, but the batter (when I licked my fingers) had a nasty aftertaste. Just a thought, and I like those brands better anyway.
