David's Yellow Cake

I'm on the hunt for a scratch yellow cake recipe and tried this one tonight. It's okay but isn't great. I made cupcakes to test it. IMO a good cake recipe should be able to do both cakes and cupcakes. So while this may make a good cake, as others attest, as a cupcake it was not good at all. They rose oddly and spread out rather than in a standard dome and after cooling they sank a bit in the centers. (My leavening agents are fresh and used frequently so it's not an ingredient problem.). The cake itself was mottled in color rather than a uniform golden. Quite unappetizing in appearance, to be candid, which was disappointing because the batter was beautiful! The taste was okay. I actually liked the flavor of the cake but it was very dense and too dry. I was sure not to over mix and to follow the directions precisely to ensure the best results possible. I'm disappointed in how my cupcakes turned out and won't use this recipe again, although I am happy to hear others enjoyed it nonetheless.

Split Pea and Ham Soup I

I was a little skeptical because of how simple this recipe is and yet it turned out wonderfully. I usually follow things to a tee but for this I did take the advice of previous reviewers and made a few tiny alterations: - I used about 3/4 pound of peas and added the last 1/4 pound at the end so there would be some non-disintegrated peas in the soup. - I added carrots and celery to the onions to add some additional veggie goodness. - I threw in a chicken bouillon cube or two with the water, as well as some herbs I had on hand. (Literally, I just grabbed things out the cabinet and used them :-) This may well have been the best pea soup I have ever had. The consistency is soupy, not thick or goopy, which I'd feared. I will definitely be making this again and again.

Mrs. Sigg's Snickerdoodles

Having never eaten, let alone baked, snickerdoodles, I am very happy with hos this recipe turned out. I bake with butter-flavored shortening, no matter the ingredients called for, and decided to stick with that instead of the butter & shortening prescribed. It worked beautifully. The only adjustment I'll make next time is in the cinnamon-sugar coating. I'll use raw sugar instead of regular white sugar to add some texture and I'll decrease the amount of cinnamon as I thought these were a bit heavy. But totally great otherwise. My husband isn't a cookie person and he went back three times for more. This recipe has earned a spot in my recipe box.

Slow Cooker Stuffing

This was by far the worst recipe I've ever tried. I followed the directions to a T and ended up with a goopy, gloppy, glob of goo. It was awful. I let it cook way beyond the time recommended and still couldn't get it to dry out to a servable consistency. Won't be trying this one again.

Beef Tenderloin in Creamy Porcini Sauce

Skillet Chops with Mushroom Gravy

This recipe is okay. I'd probably add some fresh mushrooms to the sauce as the soup just wasn't flavorful enough. But it was a nice way to serve chops other than frying them.

Hot Spiced Cranberry Cider

My mom made this every year for the holidays and I thought I'd lost that tradition. I'm so thankful that I found it here. This cider is so great! We make it in a crock pot and just let it simmer while we eat, bond, and mingle.

Chocolate Orange Truffles

Contrary to what may have been written by others, this recipe is very good and not too difficult to complete. The key is patience. I followed the recipe exactly and these truffles came out very well. But you must be sure to refrigerate the chocolate for at least 2 hours, then again after scooping and after rolling. That makes a huge difference in the end result. My only complaint was that I found the chocolates needed more sugar and a stronger flavor. The liquier just couldn't compete with the strength of the semi-sweet chocolate. ADDITIONAL NOTE: You must keep these refrigerated. If they get to room temperature the ganache melts.

Chicken Noodle Soup

I am thoroughly impressed with the awesome flavor of this recipe. It's matched only by the ease of the recipe. I cooked this for a weeknight dinner and it was just fabulous. The marjoram is perfect with this soup. My 4 year old son had 2 bowls. I will definitely be making this again.

Beef Barley Vegetable Soup

This was amazing. It has certainly become a staple in my recipe box. I didn't have too much time so I cooked the roast in the oven and the barley on the stove in some beef broth. Other than that I followed the recipe exactly. The flavor was amazing. It was so hearty and healthy tasting. I will definitely be eating this again.

Apple Crumble Pie

This was okay. It was a nice variation from the typical apple pie but it wasn't that great. My husband loves apple crumble pie and he was not overwhelmed. In fact, he said not to bother making it again. The topping wasn't what I'd hoped for. There wasn't enough spice even though I'd added cinnamon to the topping. All in all, it was a good attempt but isn't worth repeating.

Broccoli Chicken Divan

This was impressively good. I had some reservations but tasting this put all of them aside. I followed some other directions about increasing the bread crumb topping and doubling the recipe and I'm glad I did. We'll definitely be eating leftovers tomorrow. This was fairly quick to make and had terrific flavor.

Peanut Blossoms

This is a family tradition. I just love this cookie. If you find that the cookies are breaking apart (as some here have noted) just cook them for 8 minutes instead of 10 and don't push the chocolates in too hard. I just adore this cookie.

Sweet Potato Pie I

For my first attempt at sweet potato pie, this didn't turn out half bad. I followed the recipe to a T and it was pretty darned good, if I do say so myself. BUT, I am used to a true southern, soul food version of sweet potatoe pie. This was good but it wasn't the soul food pie. The pie has a beautiful color, isn't too sweet, or too spicy. It's a nice version of sweet potato pie so I'll still give it 4 stars out of 5.

T's Easy Chicken

This rates 5 stars with me. It was super quick. The chicken was tender and moist. And, best of all, this is a REALLY versitile recipe. I can definitely see using zucchini, squash, green beans, eggplant, etc. or whatever else is on hand as part of the mix. And you could certainly try a little balsamic vinegar to sweeten up the sauce (drop the lemon) or even using white wine. This recipe is a great base with endless possibilites. I will certainly enjoy trying them all!

Shepherd's Pie I

This is a great, quick version of one of my favorite winter comfort foods. If you had more time or the inclination, you could certainly add more veggies to the mix or use real mashed potatoes to make it heartier. I followed the exact recipe this time and was very impressed by the quickness of the recipe in relation to the great flavor. This working mother really loved serving her family such a hearty, home-cooked meal tonight. Bravo!

Mom's Ginger Snaps

THANK YOU MOM! I love the flavor of gingersnaps but can't stand the toughness of most cookies. I'm a soft-cookie person and this recipe met that need. I like things really spicy too so I doubled the spices like someone before had suggested and these came out fabulous. I wouldn't change anything else. I served these with Pumpkin Dip (also found on this site) and it was great. These cookies are a new staple to my recipe box.
