Southwestern Pasta Salad

My family loved this dish! I made it into a entree by adding seitan (we are vegetarian). I also added a little besamic vinegar and sauted our bell peppers with the seitan and a little more spice. Next time I might add cube cheese and onion. Over all this recipe is very yummy and easy to make your own.

Vegetarian Lime Orzo

I made a mistake. Thinking I had Orzo, I got everything together and started cooking. When it was time to add the Orzo, it was then that I noticed I had Risotto(Italian rice) and not Orzo. I decided to continue with Risotto and added about 1 1/2 more water and increased the cooking time. I added red pepper flakes and omitted the parsley and cheese for personal taste. My family loved it, including my 2 yr old! I think the flavors were perfect and yummy.

Plain Egg Less Cake

Best eggless cake I have had so far. Instead of vanilla extract, I used almond extract and put slivers of almonds in the icing. I also took the advice to use vinegar, a little more sugar and more flavoring. I think the texture turned out wonderful.

Fruited Tofu Curry Salad

My Personal Note I tried to keep the preparation for the tofu simple and I agree that it can be bland if just boiled. I usually saute the tofu in oil with cumin or a mixture of spices (like curry as suggested in the reviews) and let it sit in casserole dish in the oven at a low temp. I also interchange raisins and cranberries or use both.

Salsa Biscuit Chicken

I made it with pinto beans and omitted the chicken. My husband and daughter loved it! Personally, I was surprise the flavor was so good for such an easy recipe. Will do again.

Broccoli Bean Pasta

My family didn't think this recipe was as bad as previous poster. I made ours with brooth and instead of evap. milk and corn starch I used regular milk and flour and made a white sauce before adding the beans. Also, I am not a big chickpea fan, so I use black beans and added corn. I think next time I might change the seasoning a little.

Gnocchi II

The finish product is very good! Just note, the dough in the end was enough for 10-12 people. I ended up adding 2 cups of flour more to the dough. I did read the reviews prior to cooking and used small baking potatoes, but that was still too much. Maybe she meant 8 small new potatoes? Overall, very yummy!

Green Chutney

This is a really good recipe! My husband tasted the chutney before dinner and decided at that point that "dinner is going to be good tonight". Only thing I did differently was roasted the peanuts in a skillet with a little bit of oil or ghee. I would only recommend this if you are using raw peanut (not pre-roasted).

Vegetarian Carrot Cake

I finally found an egg less carrot cake! I thought the recipe was good, not as moist as the cake with eggs. However, I gave it 5 stars, since this is the best egg less recipe I have found. Light on sugar (the way my husband likes it); and with a cream cheese icing it is very good. I did a bunt cake and the amount was perfect.

Quick and Easy Apple Muffins

Easy recipe, but a little bland and rubbery. I think it could have more "zing" without adding more sugar. Honestly, I don't think I over mixed the dough to make it rubbery.

Eggless Crepes

I actually didn't refrigerate for 2 hours and they still turned out. This was a nice, simple recipe that worked perfectly for our needs. We ate the crapes with fruit and whipped cream. Yum!
