My favorite family cooking traditions
Well, with my mother it was easy cassoroles dishes. After while, my siblings and I grew tired of cassoroles and vowed to stay away from them, unless they look and smell really good. Luckly, our Great Aunt lived us and taught us the basics, including canning and making jellies. When we come together it is amazing that all of us are really good cooks.
My cooking triumphs
*A smile from my husband when any dish I make taste simular to his mother's. * When my husband joins me in the kitchen to help make a dinner party a success. He is an excellent cook.
My cooking tragedies
I try to forget. However, I do remember pulling out the fire extinquisher on 2 occassions.

Southwestern Pasta Salad
My family loved this dish! I made it into a entree by adding seitan (we are vegetarian). I also added a little besamic vinegar and sauted our bell peppers with the seitan and a little more spice. Next time I might add cube cheese and onion. Over all this recipe is very yummy and easy to make your own.

Vegetarian Lime Orzo
I made a mistake. Thinking I had Orzo, I got everything together and started cooking. When it was time to add the Orzo, it was then that I noticed I had Risotto(Italian rice) and not Orzo. I decided to continue with Risotto and added about 1 1/2 more water and increased the cooking time. I added red pepper flakes and omitted the parsley and cheese for personal taste. My family loved it, including my 2 yr old! I think the flavors were perfect and yummy.

Plain Egg Less Cake
Best eggless cake I have had so far. Instead of vanilla extract, I used almond extract and put slivers of almonds in the icing. I also took the advice to use vinegar, a little more sugar and more flavoring. I think the texture turned out wonderful.
