Mozzarella Puffs

As soon as I saw this, I knew I would be making pizza puffs because my husband loves pizza. I used Grands jr's after reading that some people thought regular biscuits were too big. I wanted Grands because they are a little larger and thicker, so the juniors pare perfect. I added a very small amount of pizza sauce to the middle, along with mini pepperoni and the mozzarella. I then warmed some of the pizza sauce on the side for dipping.i sprayed the tops with olive oil and sprinkled on some garlic powder. These came out wonderful and my husband loved them! Next time I will use even more pepperoni, I was a little on the stingy side the first time around because I wanted to make sure they stayed closed. I actually spent a little more time sealing these up because I wanted them tight and you have to make sure the sauce does not interfere or it makes it harder to close. This is a great, quick, flexible recipe. My husband is already talking about a sausage version!

Southern Candied Sweet Potatoes

Loved this recipe! Made it for my family Thanksgiving and everyone loved it! I was even surprised it turned out so tasty. I was fearful of having my potatoes crumble or be underdone, so I did stick with my usual method of washing and boiling the potatoes first. I monitor them by pricking with a fork for doneness. I cook a lot at a time, so softer ones get used for pies since they will be mashed anyway and the firmer ones I use for the recipe. Boiling first means once they cool, I can peel almost all of them by hand, the skin raises up and just comes right off. It's stickier, but easier than peeling raw. I used half sugar and half dark brown sugar like some of the other comments. I put the sliced potatoes in a baking dish, poured a little of the melted butted over them, the rest of the butter went into the sugar mixtures. I then gently incorporated the sugar butter mixture into the potatoes so that they were covered but not handling them too much so they wouldn't break up. I then covered with foil and put them in a 350 oven. I'm not sure of timing, maybe half hour then I uncovered for nother half hour or so. Mostly I just "eyeballed" it. I removed when the sugar was brown and bubbly. There may be small clumps of unmelted sugar coating, but it makes a nice addition and texture. This is especially good if you have to heat it in the microwave because it will then melt down more. I love vanilla, but forgot it! No problem...these are sweet and flavorful. My new go to recipe!

Spicy Spaghetti Squash

I really have never liked squash or zucchini types of vegetables, but there was so much positives about spaghetti squash, I decided to try it. I found this recipe and put it to the test. I added chopped tomatoes to get rid of them and followed everything else as written. This recipe is very easy and pretty quick, my squash was done in the oven ahead of time. I was scared to try the microwave as some comments stated. I was only disappointed that squash is so watery, which is probably one of the reasons I never liked it. Like okra, if you don't have it made correctly when you first try it, you will hate it forever...at least I usually do. I put free mozzarella on it and really liked it. I love the sauce and will likely put it on some fettuccine at some point. I will also cut down a little on the cayenne. This does not take the place of pasta If that is truly what you want, but it is great as a way to enjoy a fun meal in place of a standard pasta dish to save on some calories and carbs. Thanks for the recipe and for helping me to Try something I never would have a year ago.

Savory Green Beans

This was good. I added one clove of garlic. Next time I will cook my pancetta a little less. I like "meaty" bacon, so I think I will enjoy this more if the pancetta is less crunchy.

Pasta With Shrimp, Oysters, and Crabmeat

I liked this recipe. It was pretty easy and tasted good. I cooked spinach, but decided to leave it out. Once I saw the dish, though, I wanted to add some color so I used a 1/4 cup of chicken broth in the pan that had the sauce in it and quartered about 10 plum tomatoes that I had left from another recipe. I cooked it over medium heat for about 5 minutes and stirred all of the left over sauce and spices down. I then poured it over the completed pasta dish. This added color, enough tomatoes for me, and just enough extra liquid. I also added italian seasoning to the shrimp and crabmeat, I didn't use oysters, used only 2.5 tsp garlic, and I didn't have enough parsley, so I used fresh basil to make up the difference. I also used regular spaghetti. I will try this again. I wish the recipe said how much a serving is so that I can more accurately account for it on my points plus, but it's worth the dish to be off a little!

Chocolate Turtles (The Candy)

This was the second year I made these for Christmas. I still have the issue of not having the bottoms covered in chocolate. I think this makes them difficult to handle and eat with the gooey caramel on the bottom.

Grandma Gudgel's Black Bottom Cupcakes

I think this recipe was very easy. I baked them for 25 minutes because 30 made them seem over done. I made these for my Christmas goodie bags, but I would like to try them again to perfect them. I doubled the recipe and made 34 muffins and had a lot of cream cheese filling left. SoI made a single batch of chocolate which made another 18. I will use more cream cheese on each muffin next time. I also used mini chocolate chips like one of the comments said, but I think I would prefer regular size. The smaller chips get lost and I like the taste and texture when I buy them from the bakery with the larger chips. For those who said their muffins ran over in the oven, none of mine did. I filled the liners a little over half full to account for the weight of the filling. Good recipe. I just want them more moist and with more cream cheeses next time I make them.

Raspberry Tilapia

I love Tilapia because it is not a strong fish and I wanted a mild recipe. This one was easy and tasted good. The fish was nice and moist. I used 2 tsp of spicy brown mustard and half the amount of honey. I also used raspberry vinaigrette instead of regular vinegar and I seasoned the fish first with just a little Mrs. Dash. I love this site because of the excellent suggestions from others and it paid off in this case. My husband liked the flavor as well.

Sweet Corn Bread

This was my first time making corn bread. These are easy and quick. They will be great with my chili. I did not have sour cream, but I know they will be even better next time with that addition. The texture is excellent. I followed some of the other reviews and added 1/2 cup of butter, 1/2 cup of sugar and used buttermilk. I like sweet, but next time I will do the regular amount of sugar and just 2 or 3 extra teaspoons. I used greased muffin pan and made 10 muffins. Baked for 20 minutes and immediately removed them so they would be out of the heated tin. I want to try these in my jumbo muffin tin so that I can use them for breakfast.

I am a horrible biscuit maker! These did not come out perfect, but better than my usual. Like it says in the video, It may take a few times, so I will keep trying since it is a pretty easy recipe. Not bad. I liked it.

Easy Chocolate Truffles

I made these again this year for Christmas. I used orange Citrine liqueur this time and I use 2 extra Tbs. That gave them a good punch because I did not think the raspberry that I used last year added any flavor. I left the orange peel out because I was afraid I would not grate it enough. This is definitely for chocolate lovers. My family did not seem to like them as much this year but that is because they are so rich and chocolaty. I also made the mistake of putting all the butter, last time I used 6 Tbs of butter like one of the reviews said. I had to make sure to keep them refrigerated because using all of the butter makes it separate out. Not sure I'll make it again.

Buttery Soft Pretzels

Everyone loved these pretzels!! I had a hard time rolling the dough into long enough lengths to twist the pretzels, but that is my own lack of coordination. These made great Christmas goody bag stuffers!

To Die For Blueberry Muffins

I made these for my husband. I think I will get the sugar crystals or leave the topping off altogether next time. I had so much and wasn't sure how much to use, but I think I used too much. Plus it was too sugary. I used half white/half brown sugar and a little less cinnamon because my husband isn't a big fan. I think these would also be good with cranberries. I hope he likes them. They are ok, but I think it is just me. I don't always do well with baked goods. I'll try them again and maybe post an update. They are easy and I like the basic recipe. UPDATE: My husband loves them! Told me not to change a thing! I will be making another batch in a few days. I had plenty of topping left and refrigerated it. Thank you for this recipe!!

Chocolate Mint Dessert Brownies

I made this for Thanksgiving and they came out wonderful! I tried a recipe from a coworker some years ago, but the brownie part didn't come our right for me. I have never had luck with brownies. But this recipe came out nice and moist and oh the creme de menthe! Thanks for this recipe; finally a brownie that works for me!

This was a good recipe that was easy to make. I was looking for ways to enjoy fruit without having to buy processed fruit cups. The ingredients are usually in the pantry, so nothing special to buy. I think I would use less cinnamon next time, though.
