Special Potato Salad

I loved this recipe! Now, I know that some dislike when people change the formula and then review, but I always find it helpful. I left out the celery and bacon (personal tastes), and used the fresh basil idea. What a wonderful flavor - tangy and fresh - not typical with mayo potato salads. Thank you for this tasty alternative!

Extra Easy Hummus

This does NOT work in a blender. I will have to try again when I get better equipment. What I ended up with was bland, and I added sundried tomatoes too.

Makeover Spinach Artichoke Spread

This was a wonderful recipe! I did use regular mayo, and the tofu blended nicely. This was a huge hit with everyone. Those who were healthful eaters loved that this was not 2 lbs of cream cheese, and those that were scared of tofu admitted that this was really good and went back for more.

Pita Chips

fabulous! I left out chervil and used italian seasoning instead of basil. They were wonderful! Don't be afraid to be a little heavy handed with the mixture, especially on wheat pitas - they need all the flavor on there. Seven minutes was perfect timing.

Little Broccoli Bites

These are great! I used fresh broccoli, and I am sure I had much more than the recipe called for, so they were filled with broccoli. The breading mix just held them together. These were a big hit last night. However, I will have to say they are NOT good when they get cold - hot out of the oven ONLY.

Garden Veggie Pizza Squares

I used the 1 1/2 packs of dough, and used the 50% bigger cresents and got a nice crust. I used a container of "salad confetti" and one of diced tri-color bell peppers. I had to do no cutting of veggies at all and it came out great!

Slow Cooker Stuffing

This is great and easy stuffing! I cut the recipe in half (small group), which had me finished in about 1/2 the time with about 2 1/2 cups of broth. I used one box of store-bought bread cubes, omitted the mushrooms, and was pretty heavy handed with the herb seasonings. My only issue today was that it was REALLY salty in my opinion, but I think that was because of my quick and easy use of canned store-bought broth. I would definitely buy low sodium broth next time AND leave out the salt from the recipe. My family, however, didn't know what I was talking about it and ate almost all of it! Thanks for this easy way to take care of one dish.

Cranberry Sauce Extraordinaire

This sauce is wonderful - the smell while cooking makes it even better! It is quite tart, so if you like sweet sauce, I would add more sugar. I also left out the pecans. Leeza mentions 'trade secret' - my mom thinks it tastes just like the cranberry dessert in a healthy choice microwave dinner (her favorite part!) :-)

Eggless Sweet Potato Casserole
