Triple Fudge Brownies
These are awesome! I love brownies, and these are now one of my favorites! They are incredibly decadent, and very moist. If you like the crust/edges of a brownie that are crispier than these might not be for you, but if you like rich moist brownie than you'll love these! I can understand why some people might debate if these count as brownies since there is cake mix in it, but the people I've served these to (and there have been many!) with no exposure to the ingredients rave about these as decadent brownies. Yum!

Grilled Tilapia with Mango Salsa
Wow. We LOVE this recipe. Not only is it fabulous and beautiful when done fully as the recipe states, but just the fish in the marinade (without the mango salsa) is the best marinade I've ever had for a fish! So we now have tilapia with just the marinade part of this recipe weekly, and add the mango salsa in on special occasions and for guests :). We don't break out the grill very often so I use the oven recipe that some other reviewer posted: put 4 tilapias in a 13x9 pan (altering the ingredients accordingly), place all the marinade on top, bake in the oven covered for 15 minutes at 350 degrees. Then uncover and bake at 375 for ten minutes. I serve the fish on top of a bed of rice and spinach. When i serve the fish I pour some of the marinade on top from the 13x9 pan which then adds a little extra flavor to the fish and acts as dressing for the spinach and rice. So yummy!!!

Polenta and Vegetable Casserole
I saw polenta in the grocery store for the first time and looked for a recipe to use it in, and came across this. Although it's not the usual recipe that my family gravitates towards, I am so glad I gave it a try! It is so yummy! And since it is loaded with healthy yummy things we don't feel the guilt along with our love for it. I've made it for several friends who were trying to find healthier recipes and they all have raved about it. We don't like olives so that is the only change we made - to omit them. Give it a try and enjoy!
