Mushroom Rice

My guests and I enjoyed this a lot. I did change the recipe slightly. I sauteed the mushrooms, onion and garlic and in a SEPARATE pot I cooked the rice in the chicken broth. Then I added the mushroom mixture to the rice before serving and garnished with some more green onions. I served it with Scott Hibbs Amazing Whisky Grilled Baby Back Ribs, the BEST rib recipe on this site! However, the rice has a nice mild flavor that would make it a great side dish for almost anything.

I thought these were fabulous! I also cut down on the liquid smoke, adding about 1/2 tsp, but followed the recipe other than that. The other thing I did was pour the BBQ sauce over the ribs once they were cooked and let them sit in the sauce for about 3-4 hours before popping them on the grill for about 5 minutes per side. They didn't burn at all, but would have if I had left them much longer. I don't know if allowing the cooked meat to sit in the sauce enhanced the flavor at all, but they sure were tasty. I'm actually on this site right now because I needed to get the recipe in order to make them again, this time for Father's Day dinner!

Hearty Meatball Soup I

Maybe I did somthing wrong, bit I really didn't enjoy this at all. I did cook it in the slowcooker and used ground chicken instead of ground turkey (since that's what I had in my freezer). But those were the only changes I made, and there was just something off about the flavor. I'm surprised, too, because I usually agree with most of the reviews on this site (and this recipe recieved a lot of rave reviews). I won't be trying it again.

Potato and Shiitake Mushroom Gratin

I thought this was excellent. My grocery store didn't have shitake mushrooms, so I used all button musrooms. I also only used about half as many mushrooms as the recipe called for, and was a little worried I didn't have enough. But since mushrooms have quite a strong flavor, I thought it was just perfect. It was definitely more like a fabulous scalloped potato recipe than a mushroom recipe, but that's what I was hoping for. Served it the Grecian Pork Tenderloin also from this site, which is another one of our family favorites.

Delicious Ham and Potato Soup

I was a little skeptical at first because the only "spices" listed were salt & pepper so I thought it would be bland. But I was definitely wrong and thought it had a great flavor. I also liked the fact that it was very quick to make - from start to ready to eat in under 45 minutes! The only extra thing I did was to add a little grated cheddar as a garnish. Will definitely make this again! What a great way to use that last bit of left-over ham. UPDATE!! I just tried this again and decided to add about 1 cup of grated cheddar to the soup, stirred until "melted" in, then served. Tasted like a ham, potato and cheddar chowder. DELICIOUS!!

Silver's Savory Chicken and Broccoli Casserole

Made this tonight, but with penne instead of egg noodles and fresh broccoli that I blanched for 3 minutes in the microwave first. For the sauce, I doubled it and added a generous dash of cayenne and curry. Then I added shredded cheddar directly to the sauce until melted. Next, I layered the ingredients as recommended but sprinkled parmesan (instead of provolone) on top of everything before pouring on the sauce. I then put a bit more shredded cheddar & parmesan over the top prior to baking. It was very tasty, and had just the right "zip", without being too spicy. I would definitely make it again.

Carrots Au Gratin

This is an excellent way to prepare carrots. I added two ingredients to the sauce that I normally add to my own cheese sauce: a scoop of spreadable cream cheese (to make is a little more creamy) and a dash or two of cayenne pepper for a little zing. I loved the addition of the onions to the sauce. I will definitely be making this again.

Sweet Green Bean Bundles

Very tasty. I used frozen green beans and pre-cooked the bacon slightly. My only complaint was that I thought they were a little soggy. Next time I'll probably take the foil off for the last 10 minutes.

Honey Roasted Red Potatoes

Very good. I cut the potatoes into 1" cubes and then mixed all the ingredients together rather than drizzling the butter mixture over the top. I also added a little dill because I really like dilled potatoes. They cooked for about 40 minutes and turned out great!

Hungarian Pork Chops

It was OK, but not my favorite. I followed the recipe exactly and served over rice. I think I may have overcooked the chops and would recommend reducing the cooking time to about 40 minutes.

Cola Chops

Very tasty and easy. I marinated the pork in the cola & ketchup for about 1 hour before cooking. I also added a dash of ground cloves to the marinade. Then I sprinkled with brown sugar and cooked for about 40 minutes. Great with rice!

Judy's Strawberry Pretzel Salad

Wow! This is great! I served it as a dessert, which is how I think its intended. I made my guests guess what was in the crust and they were shocked to find out it was pretzels! I have made this a few times now, and always use fresh sliced strawberries.

Spring Salad

Very yummy! I didn't change anything in the recipe. I like this salad because you can make it ahead of time, as opposed to some other salads that just get too soggy when prepared in advance.

Ultimate Twice Baked Potatoes

These are awesome! I have also used this just as a casserole. I boil about 6 potatoes and then mash them together with the sour cream, milk, cheddar, onions, etc. Then I top with grated cheddar & bacon and bake in a 350 oven for about 30 minutes. Very yummy and less work than stuffing the potatoes (but obviously not as pretty!).

Vegetable Chowder

I have made this a few times and it always turns out great! I usually follow the recipe, but add a dash of curry & nutmeg with the milk. I'm not a bit fan of curry, but it seems to work in this recipe.
