Thai Spicy Basil Chicken Fried Rice

Delicious and easy. I had leftover wonton filling (ground pork, scallion, soy sauce, sesame oil) that I used instead of chicken, plus I used Thai chilis in place of the serrano. Otherwise, I followed the recipe to a T. Easy and quite authentic tasting, much like the rice I remember eating in Thailand. Thai basil, though hard to find, is the key to its authenticity.

Best Big, Fat, Chewy Chocolate Chip Cookie

I misread the recipe the first time and used softened butter instead of melted butter. The second batch, I melted the butter. I liked it much better the first time with the softened butter, the texture was softer. An excellent, easy cookie recipe.

Apple Brie Quesadillas

Great combination of flavours. I used gala apples as they hold together well. I used a mandolin to slice the apples, which made it easy for me to make sure I had the right ratio of onions to apples. I used six mandolin thin slices of apple, with about a generous tbsp of onion mixture. I found putting cheese, then 3 apple slices, then a dollop of onions, another layer of 3 apples slices and more cheese worked well. The cheese acted like glue to hold the quesadilla together. I also used fresh rosemary and added a little cracked pepper.

Farmer's Market Vegetarian Quesadillas

Simple and good starting point for a tasty meal. It's one of those recipes that welcomes creativity. I highly recommend adding your favourite herbs and spices as the recipe is quite bland on it's own. I added flat leaf parsley and pepper. I can see how a clove of garlic, as others have recommended would make a welcome addition. I'll definitely do this one again.

Three Cheese Garlic Scalloped Potatoes

These potatoes were great! My husband made them last night with roasted chicken. He did change a couple things, used milk instead of heavy cream and added chunks of blue cheese which were a welcome flavour surprise. As others suggested, he cooked them for longer, about 70 minutes in total. We had the leftovers for breakfast and served them with eggs and bacon...decadent!

Spaghetti Squash I

Easy to make and very good. I used dry black olives and pitted them, they are richer and saltier than regular black olives so they really added a punch. I'll make this again for sure.

Basic Vegetable Stock

Perfect simple vegetable stock and a great way to use up old vegetables. I throw all my vegetable trimmings in the freezer (stems from mushrooms, broccoli, asparagus etc) and bring them out when I make the stock. I don't add any salt because I use it in many different recipes and I like to season to taste at the end.
