Pork-n-Beans Cake

This cake was very moist. I did as others suggested and used applesauce instead of vegetable oil. I also used 1 and 1/3 cup sugar instead of 2 cups. I love raisins so I added slightly more then the optional amount. I also mashed the baked beans with a wooden spoon in a separate bowl (as best as I could) before adding them to the mixture. My work colleagues and friends had no idea that baked beans were an ingredient! They truly enjoyed the recipe, and so did I. Also I used part of the batter to make muffin-cakes (huge hit) and the other part I put into mini loaf pans. I cooked them each for 25min, then when that time was up I did the toothpick test and proceeded accordingly. In my non-convection oven they both cooked for about 30 min. I fill my mini loaf pans about 3/4 of the way to get a baked result that is slightly under the top of the pan. Thanks for this recipe, I will be making it again!

Sweet Potato-Turkey Meatloaf

The ketchup, dijon mustard, bbq sauce I mixed in a separate bowl, adding half to the meat and half spread on top. It worked well, although next time I might make more of it because I actually found the meatloaf itself kind of bland. I used oatmeal instead of wheat bread, which in my opinion doesn't cause it to have a weird consistency or cause it to easily fall apart. If you don't have honey bbq sauce, which I didn't, you could mix plain bbq sauce and honey which works and tastes great. I actually wish there had been extra of that bbq/ketchup/dijon mixture because it would have worked nicely on other meat dishes. Thanks for this recipe.

Amazing Butternut Squash

This was pretty good. I'm sure others might find the flavor combination a hit and interesting. I added brown sugar to it when I was eating the dish, which helped it for me. Also, perhaps doubling the cracker mix so that it covered more of the surface might have helped, then I might not have needed the extra brown sugar.

"Spa"ctacular Frozen Grapes

These were pretty yummy and look really nice on a pretty plate. I think they would have been good frozen plain, but it depends on what sweetness you are in the mood for. I made 2 changes, I used two packets of Truvia (4 tsp regular sugar) and 3 tablespoons regular sugar to cut back on the calories. It wasn't very many calories saved, so maybe next time I will up the amount of Truvia, because it tasted fine.

Garbanzo Bean Chocolate Cake (Gluten Free!)

I received a number of compliments for this recipe. It was moist, had easy clean up, and tasted very good. I made a few changes, I used egg substitute for one of the eggs it turned out fine so I might try using it for two eggs next time, I used one 16oz can of garbanzo beans instead of a 19oz can, and I used a blender instead of a food processor. It was a great success and enjoyable. - Don't dust the cake and quickly after cover with saran wrap. I did this, and when I went to unwrap and serve it the design had disappeared into the cake. Wrapping the cake keeps moisture at the perfect amount, so wait till after you unwrap for serving to sprinkle powder sugar. - Thanks for sharing this recipe!

WWII Oatmeal Molasses Cookies

These cookies were great. Growing up I wasn't much for molasses, but as an adult I thought I might give these a try and now I have to say molasses is yummy. The oatmeal adds a nice texture. I cooked them for 9 minutes in a convection oven and immediately removed them from the baking sheet after. I am so happy I did that because they turned out softer and chewier. Also I used egg beaters instead of whole eggs, that cut back the calories even more, and it didn't compromise the taste. My family thought they were buttery and delicious. Thanks for posting!

Fruity Curry Chicken Salad

This was a wonderful dish. I loved the flavor the second day. I made a few changes to the ingredients: Red grapes instead of green, raisin medley instead of golden raisins, red apples instead of golden delicious apples. Those ingredients were changed because that is what I had on hand and it tasted fine, a total hit! However, I remember wishing the curry flavor was a little stronger, I added a slightly rounded 1/2 teaspoon and I feel that it could have used even more. Also I would have added a little more toasted pecans, raisins, celery, and grapes. Too true that this is a tasty AND healthy dish. Thank you for sharing!

Incredibly Cheesy Turkey Meatloaf

Incredibly delicious too! I used 1/4 less Colby cheese and cut them into smaller cubes so it would feel like more. Even eliminating that amount still made it a wonderful recipe. Thank you for sharing!

Brown Sugar Meatloaf

Amazing! As my family agrees, meatloaf is a comfort food, and this meatloaf was astounding! It was sweet and meaty with an onion flavor that complimented the main flavors wonderfully. I actually might add a bit more onion next time. There was one change I made, I used Quaker Oatmeal instead of the saltines, it didn't compromise flavor at all. Thank you for sharing!

I made this recipe and it was delightful! My family enjoyed it over a bed of spaghetti. A few things we changed, we used 2+ cups of parmesan and a lasagna dish instead of the 1 1/2quart casserole dish using the same measurements for 4 servings. Thanks for sharing.

Mom's Date Pudding Cake

Wonderful! I made this recipe almost exactlybut had a few changes: -Instead of butter I used Brummel Yogurt Spread (to cut back on calories...it tasted fine) -1/2 the sugar in the batter -cut the dates in half I think next time I will use more dates, mostly because I love their taste. Also I will not add sugar into the batter, because the brown sugar sauce was enough. I agree with other reviews, in that the natural sugar of the dates is enough for the batter. Adding the sugar to the batter takes away from the date flavor. Thank you for submitting this recipe!
