Bacon Water Chestnut Rolls

EXCELLENT! I would not recommend using thick sliced bacon, use the thinner slices instead. I used whole chestnuts and 1/2 piece of bacon. I cooked my rolls on a wire rack inside a cookie sheet and used a convection oven to bake them - you will not need to turn them halfway through cooking, they came out very crispy and cooked in 30 minutes. I made the sauce using equal parts of the ingredients, it came out great and I served it on the side for dipping. Everyone loved them. I will definately be making these again!

Jumbo Shrimp and Asparagus

I made this last night - hubby loved it! I substituted ground ginger because I did not have fresh - I used 3 teaspoons but would probably use 2 or fresh next time. I served it over steamed rice - excellent, quick meal!

Strawberry Spinach Salad I

Followed directions exactly - was EXCELLENT! I also used the dressing for spinach salad containing bacon, red onion and gorganzola cheese - was fantastic on that, too! The dressing goes far - use small amounts to begin with...add as you go. Enjoy!

Beef Stew VI

Great Recipe! I used salt, pepper and garlic powder to season the meat while it cooked. I used premade beef broth instead of water and added a few bay leaves with the rosemary while the beef simmered. Instead of corn starch I used Potato Buds (1-2 cups, depending on preference) to thicken the stew - better consistency and taste! Easy to make - a keeper!

Beef and Parmesan Pasta

Overall VERY good! Made the following changes: sauteed onions and garlic with the hamburger, used Italian stewed tomatoes (with garlic, basil & oregano), added sliced mushrooms along with the zucchini, and added additional spices (basil, garlic salt, italian seasonings) during the simmer. Came out great! Loved that it only took one pan and you had pasta, meat and veges in one dish! Will definately make again.

Mexican Casserole

Good Recipe. Doubled the ingredients and added LOTS more chips to the top. Also, seasoned the chicken while cooking with garlic powder, salt and paprika for more flavor. Will probably substitute ground beef next time.

South Beach Peanut Butter Cup

FABULOUS!! I defrosted the ice cream for 15 seconds in micro, stirred ingredients together and then re-froze the dessert in covered dish for 30 minutes...came out great!!

Rempel Family Meatloaf

The meatloaf is AWESOME!! Followed directions exactly and loved it. However, I do prefer the topping from Glazed Meatloaf I, so I use that on top of this meatloaf...excellent combo!

New England Clam Chowder I

OK for a basic recipe, but I made the following changes: added more potatoes and doubled the clams, added sliced celery, old bay seasoning, bay leaves and used potato buds (about 1 cup) to thicken the soup - gave it better consistency and texture.

Microwave Pralines

Overall, very good and easy. However, be sure to use a glass bowl for the microwaving (my sister used plastic and it was a disaster!) Even though many people seemed to have a problem with getting them to set up - mine set too fast and I followed the directions exactly. Next time I will only allow to cool for 2 mintues before spooning onto wax paper - they tasted great but did not look very good because they had cooled too much. I will make again and maybe add a bit more pecans!!

Candied Sweet Potatoes

This recipe was okay. I cut the butter in half and it was still WAY too much! Also I decreased the brown sugar and it was still too sweet. If I make again I will use 1/4 cup butter, 1/4 cup brown sugar and 2 cups marshmallows! Also, we like our potatoes a bit chunky, so I will cube them before boiling and then mix them with the sauce before putting into the oven, instead of mashing them. The overall flavor was GREAT but they were too oily and sweet to eat very much. But I'll give it another try with the above changes.

Creamy Au Gratin Potatoes

Fabulous! I did preboil the potatoes but only cook for 5 minutes - I cooked mine too long and they were more mashed then scalloped but they tasted great anyways! I did add 1/4 tsp of Tabasco Sauce to the mix to give it a bit more flavor. Everyone loved it, will make again!

Lemon Pepper Shrimp with Mustard

GREAT! Easy and quick with lots of flavor. I added a bit more garlic and wine, and used less than half the butter and still great! Served it over steamed brown rice. Would also be great with scallops, calamari, etc! Will definately make again.

Creme Brulee French Toast

EXCELLENT! Followed the recipe but did not add the brandy, instead added 2 teaspoons of vanilla (instead of 1) and dipped each bread slice (crust removed) into the egg mixture before adding to pan - poured remaining mix over the casserole. Next time I will add chopped nuts of some sort to the bottom of the pan with the brown sugar mixture, then top with bread! I also baked with foil on pan for 30 minutes and then removed foil for 15 minutes - came out great! Not too hard, not too soft.
