Savory Crab Stuffed Mushrooms

Reviewed: Jun. 30, 2006
I thought these were just ok. I was really expecting something fabulous based on reviews...but I think they fell short, sorry! I followed exactly except for adding a bit more garlic. My guests seemed to like them but nobody raved or asked for the recipe...so will probably not make again.

Spicy Bean Salsa

Reviewed: Jun. 30, 2006
Very good...and simple, too! I did use Fiesta Corn, marinated poquito beans with cumin & garlic, and black beans, then added jalepeno's and cilantro. I used the Wish Bone Zesty Italian dressing and mixed it my self to use less oil. Made the dip the night before and allowed all the flavors to blend...GREAT! Will make again.

Luscious Slush Punch

Reviewed: Jun. 30, 2006
GREAT! Served this last weekend (it was very hot outside) and it was a huge hit! I did cut back on the sugar - 1.5 cups is plenty! I also found that one frozen mixture is plenty for 2 2-liters of soda, so you can use 4 total 2-liters of soda with the frozen mixture. Everyone loved this - will definitely make again. Thanks!

Marinated Flank Steak

Reviewed: Jun. 14, 2006
We loved this marinade!!! I followed the recipe as written and served the meat with some sauted bell peppers, onions and garlic...came out great! I did pour a bit of marinade on the veges as I was cooking them to give them some flavor. This was really good and I only had about 5 hours to marinade the meat and had to grill indoors due to the weather...still came out great! I'll make again...and again!

Broccoli with Garlic Butter and Cashews

Reviewed: Jun. 14, 2006
We liked this recipe. I did cut back on the butter (used half the recommended) but followed everything else in recipe. I think next time I will saute the garlic in the butter a bit before adding the remaining ingredients for the sauce. Also, I will allow the sauce contents to boil for a couple of minutes to allow the sauce to thicken a bit so that it will stick to the broccoli a bit better. Overall, good recipe...I'll be making this again.

Sweet Green Bean Bundles

Reviewed: Jun. 14, 2006
Very good! I used fresh green beans, blanched them in boiling water for 5 mintues, and precooked my bacon for 2 minutes before grouping the beans bacon. I will probably pre-cook the bacon a bacon a bit more next time. Just to cut down on some calories, I used less butter and added a bit of water to the brown sugar mix. I also baked for 30 mins and then broiled them for 5 mintues to help crisp the bacon...but I would have liked it a bit crispier once cooked. Overall, these were really good and they looked really nice once cooked. I'll make them again.

Yummy Sweet Potato Casserole

Reviewed: Apr. 25, 2006
I did the following....just microwaved my potatoes until fully cooked and then sliced them and placed cut side down into an 8X11 pan. I combinded the topping ingredients (flour, sugar, butter and nuts) and crumbled it on top of the potatoes and baked for 20 minutes....TO DIE FOR...and much lower in fat and calories than making the "casserole". You might want to note that the topping does NOT spread (the flour prevents it) so how ever you top it...that's how it will look when it comes out of the oven. Just wanted to let you know being I thought it would melt and spread a bit...but it does not! Very good recipe, will make again!

Baked Pork Chops I

Reviewed: Apr. 25, 2006
OK, I've made this dish twice now...and the coating always falls off the chops once it's baked in the sauce! I followed exactly...so I don't know what I am doing wrong. But the dish tastes good! The sauce is fabulous! I used all low-fat ingredients and it's still really good! I think it would be good with chicken too...and I think you could do it without breading and browning the meat first. Overall, good tasting...so I will make again!

Ranch Crispy Chicken

Reviewed: Apr. 25, 2006
I dip in egg first, then coat. I have used breadcrumb and panko crumbs - both are good. Easy but nothing spectacular.

Roasted Lemon Herb Chicken

Reviewed: Apr. 22, 2006
Fabulous! I did rub under the skin (we don't eat the skin) and added a quartered onion, 5 cloves of garlic and the lemon rind inside the body cavity while cooking. This chicken came out perfect and everyone LOVED it! Will definitely make again!

Creamy Potato Pork Chop Bake

Reviewed: Jan. 16, 2006
Very Good...and easy! I made the following changes: used 30 oz of hash browns, 1 cup sour cream, 1 cup cheese mixed into potatoes. I did not mixed the french fried onions into the mix. After cooking for 40 mins, I topped with 1/2 cup cheese and 1 cup fried onions...came out great! If you use the 30 oz. of potatoes I would suggest baking for an extra 10 minutes! Will make again!

Hot Fudge Ice Cream Bar Dessert

Reviewed: Jun. 4, 2005
TO DIE FOR!!! Would give it 10 stars if I could! Easy to make and everyone LOVED it! Can be made a couple of days ahead of time, if needed, just wrap well with saran wrap and foil and store in freezer. Will definately make again. This would also be a fun dessert to make with kids! Thanks!

Mexican Cream Cheese Rollups

Reviewed: Jun. 4, 2005
Very good! I made the following changes: doubled the cream cheese and added 1/2 cup sour cream to the mayo mixture (everyone seemed to say that it did not make 8 roll ups). And I added finely chopped scallions, diced green chilis, a dash of tabasco sauce and about 1/4 cup grated mexican cheese. Made the mixture the day before to allow flavors to blend and then refrigerated the roll-ups before cutting into pieces. Everyone LOVED them and asked for the recipe. Will definately make again!

BLT Salad

Reviewed: May 9, 2005
Thought this was OK at best. Followed exact and the dressing was tasted "funky", don't really know if I would make again or how to improve it. Guess I was expecting something fabulous by the reviews but was disappointed.

Thought this was ok. The pickle relish did not really go with it, I thought. If I make again I will not add the relish.
