This is really good! I used tips from other reviews: cut the oil to 1/2 cup, added sweetened applesauce (I meant to add 4 oz aka 1/2 cup but accidently put the entire can - 8oz! I was sure it would be ruined but it was still moist and yummy without being oily!) I also added chopped walnuts and an extra 1/2 tsp cinnamon. I used 5 5/8 x 3 1/8 inch bread pans (all I had) and wrapped them as gifts for friends and family. The only reason I didn't give this recipe 5 stars is because it is not quite what I expected - I really wanted a more velvety "pumpkin" texture but then again, this is bread not pumpkin pie. Next time I may add a bit more pumpkin puree and see what happens. I drizzled cream cheese icing on the top of one loaf but actually like it better without it (it's just unnecessary - the bread is pretty and sweet without the added frills) Oh, and it DOES taste even better the next day!
